Egg & Potato Curry ( Anday Aloo Ka Salan )



A typical Pakistani recipe ... Delicious Egg and Potato Curry cooked with onions and tomatoes.

Egg & Potato Curry ( Anday Aloo Ka Salan )

Serves : 4 - 5

Ingredients :
  • 4 - 5 eggs
  • 3 medium potatoes
  • 1/4 cup oil
  • 1 large onion, thinly sliced
  • 1 tbsp.  ginger garlic paste
  • 2 large tomatoes, chopped
  • 3 cloves
  • 2" cinnamon stick
  • 1 black cardamom
  • 1 tsp.  cumin seeds
  • 1 tbsp.  salt ( or to taste )
  • 1/4 tsp.  turmeric powder
  • 1 tbsp.  red chillies powder
  • 1 tbsp.  coriander powder
  • 1/4 tsp.  garam masala powder
  • Fresh coriander leaves,chopped

    Method :
    • Hard boil the eggs in a pan with water.
    • Drain water, let them cool and remove the shell.
    • Heat oil in a pan.
    • Fry eggs on medium heat until they turn golden brown.
    • Remove from oil and keep aside.
    • Peel and cut the potatoes into large cubes and keep them in tap water.
    • Reheat oil in the pan, add onions and fry until golden brown.
    • Remove from oil and put in a blender with tomatoes and cumin seeds.
    • Blend to a fine paste ( add little water if needed ).
    • Add garlic and ginger paste, cloves, cardamom and cinnamon stick to the oil; stir constantly.
    • Add chillies powder, turmeric, coriander powder and fry for few seconds.
    • Add blended paste of onion & tomatoes. Add salt and (1/2 cup) water.
    • Cover and cook over medium heat for about 15 minutes or until the water dries out and the oil begins to separate.
    • Add potatoes and stir the contents until the spices coat the potatoes well.
    • Add enough water ( to cook the potatoes ), cover and cook over low heat until the potatoes are tender.
    • Add fried eggs and enough water for curry/gravy, bring to a boil.
    • Add garam masala, coriander leaves to the potato curry, stir gently and transfer to serving dish.
    • Serve hot with chapati or paratha.

    13. Hi! Everytime I cook this dish, I always use your recipe. It never disappoints! The only step I skip is frying the eggs, otherwise everything is I follow to a tee. In my home, we usually eat this with chawal/rice. Thanks for sharing this wonderful recipe!!
