Kaleji Gurday Masala ( Mutton Liver Kidney Curry )


Kaleji Gurday Masala ( Mutton Liver Kidney Curry ) ... Mutton liver and kidney, cooked together in onion and yogurt based curry. This delicious curry is specially prepared on Eid-ul-Adha, after qurbani ( animal sacrifice ) and is served as a breakfast / brunch with roti or Naan.

Achari Muthian Salan ( Pickled Kabab Curry )


Achari Muthian Salan ( Pickled Kabab Curry ) ... Beef / Mutton Kababs in thick tangy curry. These Kababs are made with ground / minced meat and spices; formed into thin sausage shapes and shallow-fried. A tangy curry is made separately with onion, tomato, yogurt and spices. Lastly, kababs are added to the curry.

Salaam to all the readers of Simply Sweet and Savory…

When Ambreen emailed me with a request for a meat related delicacy served during Eid, I couldn’t say know to her. Who would be able to say “no” to the simply sweet Ambreen? J Amid short notice, though I rummaged through my drafts, I was not able to find much of recipes related to mutton or beef, mainly because it is something cooked when you are really in a mood to or there is an occasion, and yes, occasions like Eid which call for some grand food!

I guess I’ll start with a little introduction about myself. I am Rafeeda, who blogs at The Big Sweet Tooth . A working mother, with two little sweethearts, who looks at cooking as a perfect stress-buster – this is the best way to sum up what I am! Cooking started something as a chore and slowly bloomed to be one of my favorite pastimes as of now. Even though my cooking is very much to please the taste buds of my live-in family, which includes my parents and brother, I love to explore and try making different dishes, which may be accepted.

Guest Post : Beef Shami Kebab ( Minced Beef Meat Cutlets ) from Lubna of Yummy Food

Eid-ul-Adha ( Feast of the Sacrifice ) is celebrated by Muslims all over the world to commemorate the willingness of Hazrat Ibrahim ( A. S. ) to obey Allah's ( God's ) command to sacrifice his son Hazrat Ismail ( A. S. ), before Allah intervened and provide Hazrat Ibrahim ( A. S. ) with a ram to sacrifice instead. Now Muslims sacrifice an animal ( usually a goat , sheep , cow or camel ) every year during Eid-ul-Adha to keep fresh the memory of that great sacrifice. The meat from the sacrifice is divided into three equal parts; one third for the family, one third for relatives / friends / neighbours and one third for the poor and needy.

While Eid is just around the corner, I thought to invite few bloggers friends to guest post here and share their favorite recipes for Eid-ul-Adha.

Today, I'm excited to be featuring a guest post from Lubna of " Yummy Food ". Most of you would be already familiar with her blog which is full of delicious recipes and stunning pictures. When I requested her to do a guest post for my blog with some traditional Eid-ul-Adha recipe, she promptly responded with this yummy recipe. Let's see what she has to share with us!

When Ambreen mailed me to write about a traditional meat recipe which I make at home for Eid-ul-Adha / Bakreed / Bakrid ... with no second thought I choose these Shami Kebab recipe ... as this is my favourite recipe and mostly made during this festive time at my aunt’s place. Chinioti Kunna Gosht : Eid-ul-Adha Mubarak


Chiniot ( a city in Punjab, Pakistan) is known for its intricately carved wooden furniture all over the world. Kunna gosht is a famous dish from Chiniot. Traditionally, it is cooked in a clay pot (mitti ki handi) which enhances its flavor.  Enjoy this delicious dish this Eid with your family :)

Mutton Yakhni Pulao ( Mutton Pilaf ) ... A flavorful rice dish cooked in mutton stock! First, a stock is prepared with mutton, onion, garlic & spices. Then, the rice is cooked in mutton stock  with fried onion, yogurt, whole spices & green chillies. This dish can be made with lamb, beef, or chicken.

My aunt makes an excellent stew with tomatoes. I was looking for the recipe when I came across this recipe made in a Pakistani food show, tried it & it turned out great. Koftay ka Salan ( Meatballs in Tomato Gravy ) and my First Award


Meatballs made of ground meat and cooked in a delicious spicy gravy.

 Koftay ka  Salan ( Meatballs in Tomato Gravy )
***************************************************

*  Prep. Time : 20 minutes
*  Cook Time : 45 minutes
*  Serves : 5 - 6

For meatballs :
  • 500 gm. ground / minced meat
  • 2 tbsp. roasted chickpeas
  • 1 tsp. dessicated coconut
  • 1/2 tsp. poppy seeds
  • 1/4 tsp. garam masala
  • 1 tsp. ginger garlic paste
  • 1 tsp. salt ( or to taste )
  • 1 1/2 tsp. red chillies powder
  • Pinch of nigella seeds, optional
  • 1 tsp. coriander seeds, crushed
  • 1 small onion, finely chopped
  • 2 tbsp. fresh coriander leaves,chopped
  • 2 green chillies, finely chopped

For gravy :
  • 1/2 cup oil
  • 200 gm. onions, thinly sliced
  • 200 gm. tomatoes, chopped
  • 1 tbsp. cumin seeds
  • 1 tbsp. ginger garlic paste
  • 6 - 8 black pepper,whole
  • 4-5 cloves
  • 2 large cardamom
  • 2 - 3 small cardamom
  • 2 inch piece cinnamon stick
  • 2 tbsp. coriander powder
  • 1 to 1 1/2 tbsp. red chillies powder
  • 1/4 tsp. turmeric powder
  • Salt,to taste
  • 1/2 tsp. garam masala powder
  • Pinch of each ( green cardamom, nutmeg & mace powder )
  • 2 tbsp. fresh coriander leaves,chopped


Method :
  • Grind chickpeas, coconut and poppy seeds to a fine powder.
  • Combine all ingredients in a large bowl.
  • Mix well and let stand 1/2 an hour to blend flavors.
  • Mean while, heat oil in a large pan / wok.
  • Fry sliced onion in oil at medium heat till light brown.
  • Remove from oil and drain on absorbent paper.
  • Put tomatoes, cumin seeds and fried onions in a blender and blend to a smooth paste.
  • Reheat the oil in the pan. Add ginger garlic paste, black pepper, cloves, cardamoms, cinnamon stick and fry for 30 seconds.
  • Add coriander, red chillies, turmeric powder and salt.
  • Stir and add the blended tomato paste.
  • Add ( 1/2 cup ) water and cook, covered, on medium heat till water dries and the sides leave oil.
  • Mean while, prepare meatballs. With wet hands, shape mixture into medium sized balls.
  • When gravy is ready, add the prepared meatballs in a single layer.
  • Cook on low heat, moving the pan occasionally for 15-20 minutes or until meatballs are done.
  • Add little water,if the gravy is very thick and bring to a boil.
  • Remove from heat. Sprinkle garam masala, cardamom, nutmeg & mace powder.
  • Garnish with chopped coriander leaves.
  • Serve hot with Naan / Chappati.

    Radish & Spinach with Meat ( Moli Palak Gosht )


    Radish & Spinach with Meat ( Moli Palak Gosht ) 


    *  Prep. Time : 20 minutes
    *  Cook Time : 60 minutes
    *  Serves : 4

    • 250 gm. meat
    • 500 gm spinach ( palak )
    • 500 gm. white radish ( mooli ) with leaves
    • 1 medium onion, sliced
    • 1 tsp. cumin seeds
    • 1 tsp. ginger & garlic paste
    • Salt to taste
    • 1 1/2 tsp. red chillies powder
    • 1/4 tsp. turmeric powder
    • 1/4 cup oil
    • 2 - 3 green chillies, sliced

      • Remove hard stems of spinach and radish leaves. Rinse thoroughly under running water & chop leaves.
      • Peel radish and cut in thin slices / quarters.
      • Combine all ingredients in a pan.
      • Cook on medium heat, covered till meat is done and water is almost dry ( There is no need to add water as vegetables will leave their water and will be cooked in it ).
      • Turn heat to high and cook, stirring frequently until water evaporates and the sides of the pan leave oil.
      • Add sliced green chillies,  mix well.
      • Serve hot with chapatti or Naan.

      Fried Muthi Kabab


      Kababs made with a blend of ground / minced meat, onion, green chillies, mint, and spices. You can  also make meatballs from it. Simply delicious ... Fry them and enjoy as a snack on their own or prepare curries with them.

      Fried Muthi Kabab

      *  Prep. Time : 20 minutes
      *  Cook Time : 20 minutes
      *  Serves : 3 - 4

      • 500 gm. ground / minced meat
      • 2 tbsp roasted chickpeas
      • 1 tsp dessicated coconut
      • 1/2 tsp poppy seeds
      • 1/4 tsp garam masala
      • 1 tsp ginger garlic paste
      • 1 tsp salt ( or to taste )
      • 1 1/2 tsp red chillies powder
      • 1 1/2 tsp red chillies, crushed
      • Pinch of nigella seeds, optional
      • 1 tsp coriander seeds, crushed
      • 1 small onion, finely chopped
      • 2 tbsp mint / green coriander leaves,chopped
      • 2 green chillies, finely chopped
      • 1/4 to 1/2 cup oil, for frying

      • Grind chickpeas, coconut and poppy seeds to a fine powder.
      • Combine all ingredients except oil in a large bowl.
      • Mix well and let stand 1/2 an hour to blend flavors.
      • Take some mixture. With wet hands, shape mixture into thin sausage shapes about 4" long.
      • Heat oil for shallow frying in a large pan / wok.
      • Place kababs and cook on low heat for about 15-20 minutes until light brown and cooked through. Turn off the heat.
      • To give kababs a BBQ effect, separately heat a piece of coal until red hot and place it in a small bowl inside the pot.
      • Pour 1 tbsp oil over it and immediately cover the pot. Open after few minutes.
      • Serve with tamarind chutney, salad and yogurt raita.

      NOTE: Don't stir kababs with spoon as they are tender and can break. Just move the pan occasionally to turn the kababs. Kababs will leave water during cooking, cook till water dries out.

      Bhuna Qeema OR Karahi Mince




      Bhuna Qeema ( Karahi Mince )

      Serves : 3 - 4

      Ingredients :
      • 1/4 cup cooking oil
      • 1 medium onion, thinly sliced
      • 1 tsp.  cumin seeds
      • 1/4 tsp.  nigella seeds ( kalonji )
      • 4 - 6 black peppercorns
      • 3 - 4 cloves
      • 1 large black cardamom
      • 2 inch piece cinnamon stick
      • 3 whole / button red chillies
      • 500 gm.  minced meat ( beef or mutton )
      • 1 tsp.  ginger garlic paste
      • 1 tbsp.  crushed red chillies
      • 1 tbsp.  crushed coriander seeds
      • 1/4 tsp.  turmeric powder
      • 1 to 1 1/2 tsp.  salt
      • 2 large tomatoes, chopped
      • 2 green chillies, chopped
      • 2 tbsp.  fresh coriander leaves
      Method :
      • Heat oil in a heavy based pan or wok ( karahi ). Add onion and fry till golden brown.
      • Add cumin seeds, nigella seeds, black peppercorns, cloves, cardamom, cinnamon stick and whole red chillies ; fry for a minute.
      • Add minced meat and ginger garlic paste; stir-fry on medium heat until the mince changes color.
      • Now add crushed red chillies, crushed coriander seeds, turmeric, salt and tomatoes. 
      • Stir well and cook, covered over medium heat for 20 - 25 minutes ( the mince will leave water and will cook in its own water ).
      • Increase heat to high, cook, stirring frequently until all the moisture has evaporated and the oil separates.
      • Add green chilies and chopped coriander leaves. Mix well and cook covered on very low heat for 2 minutes.
      • Serve hot with Nan / Chapati.
