Zarda ( Sweet Yellow Rice )


Zarda ( Sweet Yellow Rice ) ... Zarda is a traditional Pakistani / Indian sweet rice dish with dried fruits & nuts. The name Zarda is derived from the Persian and Urdu word 'zard' meaning 'yellow'. It is a popular dessert on weddings and also distributed during Islamic festivals and religious occasions.

Chinioti Kunna Gosht : Eid-ul-Adha Mubarak


Chiniot ( a city in Punjab, Pakistan) is known for its intricately carved wooden furniture all over the world. Kunna gosht is a famous dish from Chiniot. Traditionally, it is cooked in a clay pot (mitti ki handi) which enhances its flavor.  Enjoy this delicious dish this Eid with your family :)

Chanay Ki Daal Ka Halwa ( Bengal Gram Lentil Halwa )


Chanay Ki Daal Ka Halwa ( Bengal Gram Lentil Halwa ) ... Traditional dessert made with gram lentils, milk, sugar, ghee and nuts. It is made specially in the winter season. You can serve it warm in a bowl ( to be eaten with a spoon ) or cold ( cut into shapes ). The halwa takes a long time to cook, but the effort is well worth it. It can be made in a large quantity and can be kept in the refrigerator for several weeks.

Peanut Cookies & Award


Peanut Cookies ... These bite-sized cookies are loaded with peanuts. They are slightly crunchy on the outside with the melt-in-the-mouth texture. This recipe is derived from these Sesame cookies. I got the idea of using ground peanuts instead of sesame seeds while preparing these sesame cookies. They turned out really good. Next time, I will add some chopped peanuts in the dough too. Hope you enjoy them as much as we did :)

Egg & Milk Halwa


Egg & Milk Halwa ... A sweet dish made of egg, milk powder, sugar & ghee. First time, I made this without whole milk. It was good while hot, but became quite hard after cooling. I added whole milk second time and it came out perfect. Little sweet though, but we loved the taste :)

Egg & Milk Halwa

Recipe adapted from Khana Pakana

*  Prep. Time : 5 minutes
*  Cook Time : 10 minutes
*  Serves : 2

  • 1 egg
  • 1/4 cup sugar
  • 1/4 cup milk powder
  • 1/4 cup whole milk
  • Yellow food color, optional
  • 2 tbsp. ghee / oil
  • 6 - 8 almonds, chopped
  • 1/8 tsp. ground cardamom

  • Whisk egg in a bowl; add sugar, milk powder & milk and mix it well.
  • Heat the oil or ghee in a pan.
  • Now gradually add egg mixture in the pan, stirring constantly until well combined  ( stir well to make sure that there are no lumps formed ).
  • Now cook on low heat, stirring constantly until it starts to thicken.
  • Cook till the mixture leaves the sides of the pan.
  • Add ground cardamom & almonds, mix well.
  • Serve hot, garnished with almonds and pistachios.

Egg & Gram-flour Halwa ... Anday Besan ka Halwa


Egg & Gram-flour Halwa ... A sweet dish made of eggs, gram-flour, sugar & ghee. It only takes 15 minutes to prepare this delicious dessert. A great treat in the cold winter months!

 
Egg & Gram-flour Halwa

Serves : 4 - 6


Ingredients :
  • 3/4 cup ghee / oil
  • 3/4 cup gram flour ( besan )
  • 2 green cardamoms ( seeds only ), crushed
  • 4 eggs
  • 3/4 cup sugar
  • Yellow food color, optional
  • Sliced / chopped almonds or pistachios, as required

Method :
  • Melt ghee in a heavy bottomed pan, add crushed cardamom seeds; fry for few seconds.
  • Add gram flour and cook on low heat, stirring until it turns light golden & releases a nice aroma.
  • Remove pan from heat, let it cool down for few minutes.
  • Combine eggs, sugar and food color in a bowl; whisk well.
  • Now gradually add egg mixture into the gram flour in the pan, stirring constantly until well combined  (stir well to make sure that there are no lumps formed ).
  • Now cook on low heat, stirring constantly until it starts to thicken.
  • Cook till the mixture leaves the sides of the pan.
  • Add almonds, mix well.
  • Transfer to serving dish, garnish with sliced almonds or pistachios.

    Danish Cookies


    Danish Cookies ... Vanilla flavored cookie dough, extruded nicely with cookies press / piping bag and  chocolate chip on the top as 'the crown'. Perfect for teatime ! The recipe was quite simple, here I just added some special touch to these :)


    Danish Cookies

    Recipe adapted from Masala Mornings by Shireen Anwer on Masala TV.

    *  Prep. Time : 20 minutes
    *  Cook Time : 10 - 12 minutes
    *  Makes : 30 - 36 cookies ( depending on the size )

    • 100 gm. Ghee / Butter
    • 75 gm. Caster sugar
    • 1 tsp Vanilla essence
    • 1 Egg
    • 150 gm. Plain Flour 

    • Melt ghee in a small pan (or Microwave 2 - 3 min ), transfer in a bowl and freeze until it starts to become solid.
    • Now remove from freezer and bring to room temperature until soft.
    • Preheat oven at 180 C.
    • Beat ghee and sugar till creamy.
    • Add vanilla essence and beaten egg; beat for 2 minutes.
    • Now fold in the flour and mix gently to a soft & smooth dough ( If dough is too soft, add extra flour ).
    • Fill cookie press / piping bag with the dough, form desired shapes on ungreased baking tray about 1" apart.
    • Bake at 180 C for about ( 10-12 minutes ) until edges are golden .
    • Cool slightly on tray,then transfer to a wire-rack to cool completely.


    Making Crown Cookies
    • Fill piping bag with cookie dough, force the dough through the piping bag onto baking tray / cookie sheet.
    • Decorate the points with mini chocolate chips as 'the crown' or make faces.
    • Bake as directed above.
