Well, today is my birthday! Another year has passed by quickly. It feels like just yesterday when I was writing this post. I'm going to make this Pineapple Cream Cake today with some slight modifications. The cake is in the oven, right now. So, how about this easy and delicious cake recipe, that just takes a few minutes to prepare.
Peanut Butter Chocolate Chips Microwave Cake

Serves : 1 - 2
Ingredients :
- 1 egg, beaten
- 1 tbsp. brown sugar
- 1/2 tsp. baking powder
- 1 heaping tbsp. all-purpose flour
- 2 tbsp. peanut butter
- 1 tbsp. chocolate chips
- 1 tbsp. peanuts
- In a bowl, whisk together egg, brown sugar, baking powder, peanut butter and flour.
- Add in chocolate chips & peanuts, stir well.
- Spoon batter into a greased ramekin, custard cup or mug.
- Microwave at 100% power for 30 seconds.
- Eat straight from the ramekin or mug, or remove cake and invert onto a plate.
- Drizzle some melted chocolate & enjoy!
Notes :
- I had to microwave it a little longer, as the top looked wet after 30 seconds. Just microwave a few seconds longer, If you need, checking after 10 seconds ( as it gets dry, very fast ).
- The cake itself wasn’t sweet enough. But with the addition of chocolate chips & drizzling of chocolate, it tasted delicious.
- The cake rises too much & it is more than enough for one person. Next time, I will make this in two individual cups.
