Tutti Frutti Loaf Cake ... A slice of this loaf cake is perfect to enjoy with a cup of tea.
Tutti Frutti Loaf Cake

Serves : 6 - 8
Ingredients :
- 6 oz. all-purpose flour
- 2 tsp. baking powder
- 4 oz. tutti frutti, chopped
- 2 tbsp. all-purpose flour
- 4 oz. butter, softened
- 4 oz. caster sugar
- 2 eggs
- 1/2 tsp. vanilla essence
- 3 - 4 tbsp. milk ( or as required )
- Heat the oven to 180 C / 350F. Grease & line a loaf tin with baking paper.
- Sift flour & baking powder in a bowl; keep aside.
- Sprinkle 2 tbsp. flour over tutti frutti, toss well & keep aside.
- In a large bowl, beat together the butter and sugar until creamy.
- Beat in the eggs one at a time until fluffy ( Add a tablespoon of flour, if the mixture curdles ). Beat in vanilla essence.
- Fold in the flour mixture along with milk, using a spatula ( or beat in, on a very low speed until just mixed ). Do not over-mix it. Fold in tutti frutti.
- Pour the batter into prepared pan and gently spread out with a spatula.
- Bake for 40 - 45 minutes until an inserted skewer comes out clean.
- Remove from the oven & allow to stand for 5 minutes before turning on to a wire rack to cool.
- Let the cake cool completely, cut thin slices with a serrated knife and serve.
