Coconut Cake ... Delicious & soft coconut cake, perfect to enjoy at tea-time!
Coconut Cake

Serves : 6
Ingredients :
Method :
- Preheat the oven at 180 C. Grease and line an 8 inch round cake tin.
- Sift the flour and baking powder into a mixing bowl. Mix in coconut & keep aside.
- Cream the butter and sugar in a large bowl until light and creamy.
- Add the eggs, one at a time and beat well after each addition.
- Add the vanilla essence and beat again.
- Add flour + coconut mixture & beat on low speed until just combined.
- Add milk, if the mixture is thick & mix well.
- Pour the mixture into the cake tin. Sprinkle extra coconut over the top.
- Bake in the oven for 25 minutes or until golden brown and a skewer inserted into the center should come out clean.
- Remove the cake from the oven. Leave the cake to cool slightly in the tin, then turn out onto a wire rack to cool completely.
