Masalay Wali Bhindi ( Curried Okra ) ... Okra / Lady finger / Bhindi cooked in a tomato based gravy. You can make it like this or you an also add meat to it.
Masalay Wali Bhindi ( Curried Okra )

* Prep. Time : 20 minutes
* Cook Time : 40 - 45 minutes
* Serves : 3 - 4
Ingredients :
- 500 gm. okra / lady finger ( bhindi )
- 1/4 cup oil
- 1 medium onion, sliced
- 1 tsp. cumin seeds
- 1 tsp. ginger garlic paste
- 2 medium tomatoes, finely chopped
- 1 tsp. coriander powder
- 1 to 1 1/2 tsp. red chilli powder
- 1/4 tsp. turmeric powder
- 1 to 1 1/2 tsp. salt
- Wash the okra and pat dry with absorbent paper ( it should be dry to cut or they will become slimy).
- Slice of tops and and ends and discard. Slice okra crosswise into 1/2 inch thickness, keep aside.
- Heat oil in a pan. Add onion and sir fry until light brown.
- Add cumin seeds, ginger garlic paste and fry for few seconds.
- Add tomatoes, coriander powder, red chilli powder, turmeric powder and salt.
- Add 1/2 cup water; mix well and let it simmer for 10 - 15 minutes till water dries out & oil separates.
- Add okra; mix well and cook on low heat ( stirring occasionally so they do not stick to the pan ) until okra is done.
- Serve with chapati / paratha.
- You can also make this with meat. Add meat after frying the onion, add tomatoes & spices. Add enough water to cook the meat, cook until the meat is almost done & the water dries out. Then add bhindi and cook till the bhindi is done.
