Kulfa / Badam Kulfi ( Milk & Almonds Ice Cream ) ... Kulfi is a traditional Pakistani / Indian ice cream made with milk, khoya, sugar & nuts.

On Eid or special occasions, we get a lot of mithai ( South Asian sweets ) including Burfi. Usually, we freeze the Burfi for later use in Kheer / Firni, Gajar Halwa or Zarda. But this time, I tried something new; a delicious, rich and refreshing frozen treat from it. It was a great hit :)

Zarda ( Sweet Yellow Rice )


Zarda ( Sweet Yellow Rice ) ... Zarda is a traditional Pakistani / Indian sweet rice dish with dried fruits & nuts. The name Zarda is derived from the Persian and Urdu word 'zard' meaning 'yellow'. Chanay Ki Daal Ka Halwa ( Bengal Gram Lentil Halwa )


Chanay Ki Daal Ka Halwa ( Bengal Gram Lentil Halwa ) ... Traditional dessert made with gram lentils, milk, sugar, ghee and nuts. It is made specially in the winter season. You can serve it warm in a bowl ( to be eaten with a spoon ) or cold ( cut into shapes ). The halwa takes a long time to cook, but the effort is well worth it. It can be made in a large quantity and can be kept in the refrigerator for several weeks.

Eid al-Adha Mubarak & Sheer Khurma

Eid al-Adha or "Festival of Sacrifice" is an important religious holiday celebrated by Muslims worldwide to commemorate the willingness of Hazrat Ibrahim to sacrifice his son Hazrat Isma'il as an act of obedience to Allah, before Allah intervened to provide him with a sheep— to sacrifice instead. On this day, those Muslims who can afford, sacrifice their best domestic animals as a symbol of Abraham's willingness to sacrifice his only son. The meat from the sacrificed animal is divided into three parts. The family retains one third of the share; another third is given to relatives, friends and neighbors; and the other third is given to the poor and needy. ( Source )


Sheer Khurma is a traditional Muslim festive breakfast & Eid's special dessert, prepared in South Asian countries especially Pakistan. It is served on the morning of Eid day in the family after the Eid prayer as breakfast, and throughout the day to all the visiting guests. It is a sweet vermicelli soup. Sheer Khurma was originally a Mughal-Afghan dish, imported to Mughal-India. Sheer means sweetened milk and khurma is made from dried dates. ( Source )

Eid Greetings & Firni ( Rice flour & Milk Pudding )

Eid-ul-Fitr is a festival that marks the end of the Holy month of Ramadan. This joyous day is celebrated to give thanks for the blessings of Ramadan. Muslims attend the congregational Eid prayer service which is held in the morning. They wear new clothing, cook delicious food and invite friends and neighbors to celebrate with them. Fasting during Ramadan inspires sympathy for the hungry and needy, and encourages Muslims to donate generously to the poor.


Traditionally, Sheer Khurma ( Milk with Dates) is prepared by Muslims on Eid ul-Fitr in South Asian countries especially Pakistan & India. This special dish is served on the morning of Eid day in the family after the Eid prayer as breakfast, and throughout the day to all the visiting guests.

I'll post its recipe on next Eid Insha-Allah ( I'm still away on vacation, this is a scheduled post ), but here is the recipe of Firni which is also prepared on Eid.

Firni ( Rice flour & Milk Pudding ) is one of the most popular Pakistani dessert after Kheer ( Milk & Rice Dessert ). In Firni, ground rice is used instead of whole rice grain. Its texture is smooth & silky. The addition of khoya makes it more rich & delicious :)

Sooji ka Halwa ( Semolina Halva ) ... The word 'Halva' comes from the Arabic word 'Halwa' ; meaning sweet or candy. Semolina Halva is made from semolina, ghee and sugar, garnished with dried fruits and nuts. It is an easy & quick dessert.'Halwa Puri Cholay' is Pakistani Traditional Breakfast. Egg & Milk Halwa


Egg & Milk Halwa ... A sweet dish made of egg, milk powder, sugar & ghee. First time, I made this without whole milk. It was good while hot, but became quite hard after cooling. I added whole milk second time and it came out perfect. Little sweet though, but we loved the taste :)

Egg & Milk Halwa

Recipe adapted from Khana Pakana

*  Prep. Time : 5 minutes
*  Cook Time : 10 minutes
*  Serves : 2

  • 1 egg
  • 1/4 cup sugar
  • 1/4 cup milk powder
  • 1/4 cup whole milk
  • Yellow food color, optional
  • 2 tbsp. ghee / oil
  • 6 - 8 almonds, chopped
  • 1/8 tsp. ground cardamom

  • Whisk egg in a bowl; add sugar, milk powder & milk and mix it well.
  • Heat the oil or ghee in a pan.
  • Now gradually add egg mixture in the pan, stirring constantly until well combined  ( stir well to make sure that there are no lumps formed ).
  • Now cook on low heat, stirring constantly until it starts to thicken.
  • Cook till the mixture leaves the sides of the pan.
  • Add ground cardamom & almonds, mix well.
  • Serve hot, garnished with almonds and pistachios.

Almond & Chocolate Chips Muffins

  
Found this recipe long time ago at Oprah site. Made few changes here and there; replaced cinnamon with cardamom, used almonds in place of pecans, almond extract in place of vanilla and most importantly Chocolate chips which I love to add in my baking goods. The result was very good ... they turned out delicious! Hopefully will be trying more variations :)

* Prep. Time : 10 minutes
* Cook Time : 20 minutes
* Makes : 8 muffins
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. ground cardamom
  • 1 egg, lightly beaten
  • 1/2 cup whole milk
  • 1/4 cup butter, melted & cooled slightly
  • 1/4 tsp. almond extract
  • 1/8 cup almonds, chopped
  • 1/8 to 1/4 cup semisweet chocolate chips


  • Preheat the oven to 190 C / 375 F. Brush the inside of each cup of a nonstick muffin pan with some of the melted butter. 
  • In a large bowl, sift flour and baking powder.
  • Add sugar, salt and cardamom into flour mixture.
  • In another bowl, combine the egg, milk, butter and vanilla, and mix well.
  • Fold the wet ingredients together with the dry until well blended.
  • Fold in the almonds and chocolate chips. 
  • Divide the batter equally into each cup. Sprinkle extra chopped almonds & chocolate chips on top.
  • Bake for 20 minutes or until tests done when pierced with a skewer.
  • Let muffins cool in the pan for 5 minutes before serving.

Mini Carrot Coconut Cakes

Carrots and coconut makes a great combination. Never used them together before but when I saw this recipe , I was eager to give it a try. I used muffin pan & small cake pans as she mentioned in the recipe. A beautiful aroma filled my kitchen, while they were in the oven. They are good plain, but even better with the chocolate. If you are a coconut lover, like me, you'll love these :)

Egg & Gram-flour Halwa ... Anday Besan ka Halwa


Egg & Gram-flour Halwa ... A sweet dish made of eggs, gram-flour, sugar & ghee. It only takes 15 minutes to prepare this delicious dessert. A great treat in the cold winter months!

Serves : 4 - 6


Ingredients :
  • 3/4 cup ghee / oil
  • 3/4 cup gram flour ( besan )
  • 2 green cardamoms ( seeds only ), crushed
  • 4 eggs
  • 3/4 cup sugar
  • Yellow food color, optional
  • Sliced / chopped almonds or pistachios, as required

Method :
  • Melt ghee in a heavy bottomed pan, add crushed cardamom seeds; fry for few seconds.
  • Add gram flour and cook on low heat, stirring until it turns light golden & releases a nice aroma.
  • Remove pan from heat, let it cool down for few minutes.
  • Combine eggs, sugar and food color in a bowl; whisk well.
  • Now gradually add egg mixture into the gram flour in the pan, stirring constantly until well combined  (stir well to make sure that there are no lumps formed ).
  • Now cook on low heat, stirring constantly until it starts to thicken.
  • Cook till the mixture leaves the sides of the pan.
  • Add almonds, mix well.
  • Transfer to serving dish, garnish with sliced almonds or pistachios.
