Chicken Karahi

Ingredients :
- 1/2 kg. chicken, cut into medium pieces
- 1/4 cup oil
- 1 medium onion, finely chopped
- 1 tbsp. ginger & garlic paste
- 2 to 3 green chilies, finely chopped
- 375 gm. ( 4 medium sized ) tomatoes, finely chopped
- 1/2 cup natural yogurt, whisked
- 1 tbsp. coriander seeds, crushed / coarsely ground
- 1 1/2 to 2 tbsp. red chilli flakes
- Pinch of nigella seeds ( kalonji )
- 1 tsp. salt ( or according to taste )
- 1/2 tsp. turmeric powder
- 1 tsp. cumin seeds, freshly ground
- 1 tsp. dry fenugreek leaves ( kasuri methi )
- 1 tbsp. finely sliced ginger
- 1 tbsp. fresh coriander leaves, chopped
- 1 tbsp. butter or Ghee ( clarified butter), optional
Method :
- Heat oil in a deep pan or wok ( karahi ).
- Add onion and ginger garlic paste. Stir-fry for 2 minutes until onion has softened.
- Now add chicken in it. Stir-fry until chicken is no longer pink.
- Add next 9 ingredients and mix well.
- Cover with the lid and cook on medium heat until chicken is tender ( Keep stirring occasionally, so the mixture doesn't stick to the pan ).
- Now cook on high flame, stirring constantly until all the liquid dries up & the oil separates.
- Add remaining ingredients; mix well & cooked covered for 5 minutes on very low heat.
- Chicken Karahi is ready to serve with Naan or Chapattis.
