Coconut Cake & Awards

Coconut Cake ... Delicious & soft coconut cake,  perfect to enjoy at tea-time!

Coconut Cake 
***************
Serves : 6

Ingredients :
  • 115 gm.  all purpose flour
  • 2 tsp.  baking powder
  • 30 gm.  ( 4 tbsp. )  desiccated coconut, plus extra for sprinkling
  • 115 gm.  butter, softened
  • 115gm. castor sugar
  • 2 eggs, lightly beaten
  • 1/2 tsp.  vanilla essence
  • 2 tbsp.  milk


Method :
  • Preheat the oven at 180 C. Grease and line an 8 inch round cake tin.
  • Sift the flour and baking powder into a mixing bowl. Mix in coconut & keep aside.
  • Cream the butter and sugar in a large bowl until light and creamy.
  • Add the eggs, one at a time and beat well after each addition.
  • Add the vanilla essence and beat again.
  • Add flour + coconut mixture & beat on low speed until just combined.
  • Add milk, if the mixture is thick & mix well.
  • Pour the mixture into the cake tin. Sprinkle extra coconut over the top.
  • Bake in the oven for 25 minutes or until golden brown and a skewer inserted into the center should come out clean. 

  • Remove the cake from the oven. Leave the cake to cool slightly in the tin, then turn out onto a wire rack to cool completely.

  20. This cake made me smile, its one of my childhood favourites and one my mother would make for us as children, then the baking was passed on to me. I so have to make this again for nephews and neices.
