Achari Aaloo or Pickled Potato Curry

Serves : 4
Ingredients :
- 250 gms. potatoes
- 2 tbsp. oil
- 1/4 tsp. cumin seeds
- 1/4 tsp. mustard seeds
- 1/4 tsp. fenugreek seeds
- 1/4 tsp. nigella seeds ( kalonji )
- 3 - 4 curry leaves
- 1/4 tsp. anise seeds ( saunf ), crushed
- 1/4 tsp. coriander seeds, crushed
- 1/4 tsp. carom seeds ( ajwaiin )
- 1 tsp. salt ( or to taste )
- 1 to 1 1/2 tsp. red chillies, crushed
- 1/4 tsp. turmeric powder
- 3/ 4 cup water
- 1 green chilli, chopped
- 1 tbsp. fresh coriander, chopped
- 2 - 3 tbsp. lemon or mango pickle ( Achar ) OR 1/4 cup tamarind pulp
Method :
- Boil the potatoes until well done. Let them cool, then peel and dice.
- Heat the oil in a pan and fry the cumin seeds, mustard seeds, fenugreek seeds, nigella seeds & curry leaves until they splutter.
- Add the potatoes & all the spices with water.
- Mash the potaoes a little bit & cook on low heat for 3 - 4 minutes.
- Chop up large pieces of pickle. Add chopped coriander, green chilli & pickle in the potatoes before taking them off the heat.
- Serve with Puri, Semolina Halwa & Chickpeas Curry.
