Butter Cake ... Using basic ingredients butter, sugar, eggs, flour and baking powder to make a lighter & fluffier cake.
Butter Cake

Serves : 6 - 8
Ingredients :
- 6 oz. ( 3/ 4 cup ) unsalted butter, softened at room temperature
- 6 oz. ( 3/ 4 cup ) sugar
- 3 large eggs
- 1/2 tsp. vanilla essence
- 6 oz. ( 1 1/2 cup ) all purpose flour
- 1 1/2 tsp. baking powder
- 2 tbs. milk
Method :
- Heat the oven to 180 C / 350F.
- Grease & line 7" x 10 1/2" cake tin with baking paper.
- Sift flour & baking powder in a bowl; keep aside.
- In a large bowl, beat together the butter and sugar until creamy.
- Beat in the eggs one at a time ( Add a tablespoon of flour, if the mixture curdles ).
- Beat in vanilla essence.
- Fold in the flour mixture using a spatula or beat in, on a very low speed until just mixed ( Do not over-mix it) .
- The mixture should be of a dropping consistency; if it is not, add a little milk.
- Pour the batter in the cake tin and gently spread out with a spatula.
- Bake for 25 - 30 minutes until an inserted skewer comes out clean.
- Allow to stand for 5 minutes before turning on to a wire rack to cool.
- Let the cake cool completely before frosting it or just enjoy on its own.

ReplyDeleteSalaams Ambreen! I just had a quick question and wanted your opinion on something. I'm planning on make a cake and custard trifle tommorow and wanted to use one of your recipes for the cake. Now my question is that do you think that this cake or the recipe you have for plain cake will be best? Which of the two do you think will hold better with custard? My plan is to make this soon inshAllah :) I love your recipes and I know that I will always get amazing results anytime I use them :)
ReplyDeleteHenna, I think any one of them would work fine for trifle. This one is more rich and buttery while plain cake is slightly spongy. Personally, I would use plain cake, soaked with fruit syrup. You're always so kind about my recipes, hope this will turn out well too :)
