Stir-fried Okra ( Fried Bhindi ) .... A simple & easy recipe of chopped okra pieces stir fried with onion, tomato & spices.
Stir-fried Okra ( Fried Bhindi )

* Prep. Time : 20 minutes
* Cook Time : 25 - 30 minutes
* Serves : 4
Ingredients :
- 500 gm. Okra / Ladyfinger ( Bhindi )
- 1/4 cup oil
- 125 gm. onion, thinly sliced
- 1 tsp. cumin seeds
- 1/8 tsp. nigella seeds ( kalonji )
- 1/2 tsp. carom seeds ( ajwaiin )
- 1 to 1 1/2 tbsp. crushed red chilies
- 1 tbsp. crushed coriander seeds
- 1 1/2 tsp. salt ( or to taste )
- 250 gm. tomatoes, halved and thinly sliced
- 1 small raw mango, peeled & grated
- Wash the okra and pat dry with absorbent paper( it should be dry to cut or they will become slimy).
- Slice of tops and and ends and discard. Slice okra crosswise into 1/2 inch thickness, keep aside.
- Heat oil in a wok over medium heat and fry onion till soft.
- Add the okra & cumin seeds; continue frying, stirring gently for another 4 - 5 minutes on High flame.
- Add all the remaining ingredients.
- Mix and cook ( uncovered & stirring occasionally ) on low heat for ( 20 - 25 minutes ) till okra is tender & the sticky texture disappears.
- Fry on medium heat for 2 -3 minutes till it leaves oil.
- Serve hot with chapati / paratha.
