Candied Fruit Cupcakes ... Soft, buttery & moist cupcakes made with candied fruits.
Candied Fruit Cupcakes

Makes : 9 cupcakes
Ingredients :
- 4 oz. butter, softened
- 4 oz. castor sugar
- 2 eggs
- 1/2 tsp. vanilla extract
- 4 oz. plain flour
- 1 tsp. baking powder
- 4 oz. candied fruits
- Preheat the oven to 180 C. Place paper cups into muffin pan cups; set aside.
- Cut the candied fruits into small pieces.
- Combine plain flour & baking powder in a bowl. Sift & keep aside.
- Combine butter and sugar in a large bowl.
- Beat at medium speed, scraping bowl often, until well mixed.
- Add eggs; continue beating until creamy.
- Add vanilla. Continue beating until well mixed.
- Reduce speed to low; add flour mixture. Beat until well mixed.
- Fold in the candied fruits.
- Fill each paper-lined muffin cup with ( about 2 tbsp. ) batter.
- Bake at 180 C for about 14 - 16 minutes or until toothpick inserted in center comes out clean.
- Allow to cool a little before removing from the pan, then place on a wire rack and allow to cool completely.
