Banana Peanut Chocolate Chip Muffins

Makes : 12
Ingredients :
- 1 cup all-purpose flour
- 3/4 tsp. baking soda
- 1/8 tsp. salt
- 2 overripe bananas
- 1/2 cup brown sugar
- ( 1/4 + 1/8 ) cup or ( 6 tbsp. ) unsalted butter, melted and cooled
- 1 egg
- 1/2 tsp. vanilla extract
- 1/4 cup peanuts, chopped
- 1/4 cup chocolate chips
Method :
- Preheat the oven to 180 C. Line a muffin tin with paper liners.
- In a large bowl, combine flour, baking powder and salt. Set aside.
- Mash 1 banana with a fork in a small bowl until slightly chunky; set aside.
- In another bowl, beat the remaining banana and brown sugar together for about 3 minutes.
- Add the melted butter, egg and vanilla; beat well.
- Fold the wet ingredients together with the dry, with a spatula until just combined. Fold in the mashed banana, peanuts and chocolate chips.
- Spoon the batter equally into each paper liner. Gently tap the muffin tin on the counter to release any air bubbles.
- Bake for 16 - 18 minutes or until a toothpick / skewer inserted into the center comes out clean.
- Stand in the pan for 5 minutes, then transfer to a wire rack to cool.
- Serve warm or at room temperature.

ReplyDeleteI should be able to replicated the recipe, read through and quite easy to make. Love anything made with bananas yet will reduce the amount of chips, not really a big fan of it. Perfectly baked and good for anytime of the day.
