Light Fruit Cake

Light Fruit Cake ... Light & buttery fruit cake, filled with candied fruits & nuts.

Today's post is my last post of the year. Thank you for your encouragement & support throughout 2011. It really means a lot to me. I hope that you'll continue to support me in the new year :)

Light Fruit Cake
******************

Serves : 6 - 8

Ingredients :
  •  1/2 cup mixed candied fruit, chopped
  • 1/4 cup raisins
  • 1/4 cup currants
  • 1/4 cup chopped almonds
  • 1 1/8 cups all-purpose flour
  • 3/4 tsp.  baking powder
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 tsp.  vanilla essence
  • 1/4 cup milk ( or as required )
Method :
  • Heat the oven to 180 C / 350F. Grease & line 7" round cake tin with baking paper.
  • Combine candied fruit, raisins, currants & nuts in a bowl. Sprinkle 2 tbsp. flour, toss well & keep aside.
  • Sift remaining flour & baking powder in a bowl; keep aside.
  • In a large bowl, beat together the butter and sugar until creamy.
  • Beat in the eggs one at a time ( Add a tablespoon of flour, if the mixture curdles ).
  • Beat in vanilla essence.
  • Fold in the flour mixture along with milk, using a spatula or beat in, on a very low speed until just mixed  ( Do not over-mix it) .
  • Stir in candied fruit and nuts mixture.
  • Spoon the batter in the cake tin and gently spread out with a spatula.
  • Bake for 50 - 60 minutes until an inserted skewer comes out clean.
  • Remove from the oven & allow to stand for 5 minutes before turning on to a wire rack to cool.
  • Let the cake cool completely, dust with Icing sugar & serve.
