Orange Currant-Raisin Muffin ... Muffins made with orange zest, currants, raisins and fresh orange juice. These delicious muffins with a refreshing orange flavor, are perfect for breakfast, snacks or even dessert :)
Orange Currant-Raisin Muffin

Makes : 6 muffins
Ingredients :
- 1 cup all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 cup caster sugar
- Pinch of salt
- 1 tbsp. grated orange zest
- 1 egg, lightly beaten
- 1/4 cup fresh orange juice
- 1/4 cup butter, melted and cooled slightly
- 1/4 cup currants or raisins ( or a mixture of both, soak in warm water for 15 minutes and drain )
Method :
- Preheat the oven to 190 C / 375 F. Grease or line a muffin tin with paper liners.
- In a large bowl, sift together flour and baking powder. Whisk in sugar, salt and orange zest.
- In a separate bowl, combine egg, orange juice and butter; mix well.
- Fold the wet ingredients together with the dry until just combined. Fold in currants or / and raisins.
- Spoon the batter equally into each paper liner. Bake for 18 - 20 minutes or until golden brown and a skewer inserted into the center comes out clean.
- Stand in the pan for 5 minutes, then transfer to a wire rack to cool.
