Kachay Keemay Kay Kabab ( Raw Minced Meat Kababs )


Kachay Keemay Kay Kabab ( Raw Minced Meat Kababs ) ... Delicious tender kebab made with raw mince meat, marinated with a mixture of spices, shaped into flat round patties and pan-fried. These are perfect as a snack, starters or main course. They can also be used to make sandwiches or mini burgers.

Serves : 6 - 8

Ingredients :
  • 1 kg.  ground / minced meat
  • 1 tbsp.  raw papaya paste or ( 1 1/2 tsp.  Kachri powder )
  • 1 tbsp.  ginger garlic paste
  • 2 to 3 tbsp.  gram flour ( besan )
  • 1 tbsp.  salt ( or to taste )
  • 1 tsp.  red chillies powder  
  • 1 tsp.  crushed red chillies
  • 1 tbsp.  coriander seeds, crushed
  • 1 tsp.  garam masala powder
  • 1/2 tsp.  ground long pepper ( pippali )    
  • 1/2 tsp.  ground Chinese cubeb ( kabab chini )
  • 2 tbsp.  dried pomegranate seeds ( anardana ), crushed
  • 2 medium bread slices, soaked in little water ( optional )
  • 1 medium onion, finely chopped
  • 2 to 3  green chillies, finely chopped
  • 4 tbsp.  fresh coriander leaves, chopped
  • Cooking oil, for frying

Method :
  • Place all ingredients except oil in a food processor and pulse until the mixture is well combined.
  • Remove from the processor and place in a bowl. Cover and refrigerate for at least an hour to blend flavors.
  • Take a small portion of the mixture in your hands. With wet hands, shape mixture in round balls and then flatten by pressing with palms.  
  • Heat oil for shallow-frying. Fry the kababs in batches over medium-high heat. 
  • Cook on one side until browned. Turn kababs and cook until browned on the other side and cooked through.
  • Serve hot with Naan / Chapati along with sliced onions, chutney and yogurt raita.
Notes :
  • Before making and frying all the kababs, make a small kebab and fry it in oil. Taste and adjust the seasonings before frying the rest of the kababs.
  • Do not cook kababs on very high flame as the outside will get cooked and the inside may be still raw.

    1. Henna, they are slightly different. Eggs, tomatoes & makai ka aata (corn meal) is used in chapli kababs :)

    1. Wan, raw papaya is used as a meat tenderize. You can make papaya paste by simply grinding the green skin of raw papaya in a blender :)
