Coconut Cookies


 
SORRY!!! I'm extremely sorry for not visiting your spaces regularly. Not much time for blogging these days. It has been a very busy month for us, we have guests visiting us. Coconut Cookies ... These cookies are crisp and crunchy on the outside and melts in your mouth. If you like coconut, you will love these!

Coconut Cookies
******************

Makes : 36 cookies


Ingredients :
  • 1 cup ghee ( clarified butter )
  • 2 cups plain flour
  • 2 tbsp.  cornflour 
  • 1/2 tsp.  baking powder
  • 4 tbsp.  desiccated coconut
  • 1 cup powdered sugar
  • 1/2 tsp.  vanilla essence
  • Extra desiccated coconut, for topping

Method :
  • Melt ghee in a pan or microwave, let it cool at room temperature. Then refrigerate ( or freeze ) until it starts to turn solid. Remove and bring to room temperature.
  • Preheat oven to 180 C. Line the baking sheet with parchment paper.
  • Sieve flour, cornflour and baking powder in a bowl. Add desiccated coconut and keep aside.
  • In a large bowl, beat ghee and sugar until creamy.
  • Add vanilla essence and beat again.
  • Gradually work in the flour mixture, mixing with your hands until the dough comes together.
  • Divide the dough into equal sized balls, roll in extra coconut. Shape and flatten slightly with your palms. Keep pressing the edges to form a smooth cookie.
  • Arrange on the prepared baking sheet, 1" apart. Bake for 12 - 14 minutes until they turn golden.
  • Remove from oven and let cool on the baking sheet for a minute. Transfer to a wire rack to cool completely, then store them in an air-tight container.

    The only problem is that my family doesn't (errrrrrrrg!)
    But I do bake coconut cookies every now and then friends are coming over, so thank you for this recipe!:)
