An easy & quick recipe for homemade cheese crackers. They smell and taste so delicious. Light, crunchy and airy; I am sure you will love it!
Cheese Crackers
******************
Makes : 5 dozen ( depending on the size )
Ingredients :
- 150 gm. all-purpose flour
- 1/4 tsp. salt
- 1/2 tsp. nigella seeds ( kalonji )
- 1 tsp. cumin seeds
- 1/2 tsp. crushed black pepper
- 1/2 cup butter, chilled
- 75 gm. cheddar cheese, grated
- 1 egg, separated
Method :
- Preheat oven to 180 C. Line a baking baking sheet with parchment paper.
- Place all ingredients ( except egg ) in a food processor. Pulse the food processor several times, 5 seconds at a time, until the dough resembles coarse crumbs.
- Add the egg yolk and process until well mixed.
- Remove mixture from food processor and using your hands, bring it together to form a ball of dough.
- Flatten into a round disk. If the dough feels too soft to roll-out, wrap it in plastic wrap and chill it in the fridge for 20 to 30 minutes.
- On a lightly floured surface, roll the dough out ( 1/8 inch ) thick. Cut out shapes with a cookie cutter.
- Brush egg white on top, sprinkle little nigella seeds and cumin seeds, if desired.
- Place ( 1 inch ) apart on prepared baking sheet. Bake for 12 minutes, or until they start to get golden on the edges.
- Remove from oven and place crackers on a wire rack to cool.
- They were best eaten the same day or store them in an air-tight container and eat within a day or two.
