Cheese Crackers

An easy & quick recipe for homemade cheese crackers. They smell and taste so delicious. Light, crunchy and airy; I am sure you will love it!


Cheese Crackers
******************

Makes : 5 dozen ( depending on the size )

Ingredients :
  • 150 gm.  all-purpose flour
  • 1/4 tsp.  salt
  • 1/2 tsp.  nigella seeds ( kalonji )
  • 1 tsp.  cumin seeds
  • 1/2 tsp.  crushed black pepper
  • 1/2 cup butter, chilled
  • 75 gm. cheddar cheese, grated
  • 1 egg, separated

Method :
  • Preheat oven to 180 C. Line a baking baking sheet with parchment paper.
  • Place all ingredients ( except egg ) in a food processor. Pulse the food processor several times, 5 seconds at a time, until the dough resembles coarse crumbs. 
  • Add the egg yolk and process until well mixed.
  • Remove mixture from food processor and using your hands, bring it together to form a ball of dough.
  • Flatten into a round disk. If the dough feels too soft to roll-out, wrap it in plastic wrap and chill it in the fridge for 20 to 30 minutes.
  • On a lightly floured surface, roll the dough out ( 1/8 inch ) thick. Cut out shapes with a cookie cutter.
  • Brush egg white on top, sprinkle little nigella seeds and cumin seeds, if desired.
  • Place ( 1 inch ) apart on prepared baking sheet. Bake for 12 minutes, or until they start to get golden on the edges.
  • Remove from oven and place crackers on a wire rack to cool.
  • They were best eaten the same day or store them in an air-tight container and eat within a day or two.
