Coconut Cookies ... These cookies are crisp and crunchy on the outside and melts in your mouth. If you like coconut, you will love these!
Coconut Cookies

Makes : 36 cookies
Ingredients :
- 1 cup ghee ( clarified butter )
- 2 cups plain flour
- 2 tbsp. cornflour
- 1/2 tsp. baking powder
- 4 tbsp. desiccated coconut
- 1 cup powdered sugar
- 1/2 tsp. vanilla essence
- Extra desiccated coconut, for topping
Method :
- Melt ghee in a pan or microwave, let it cool at room temperature. Then refrigerate ( or freeze ) until it starts to turn solid. Remove and bring to room temperature.
- Preheat oven to 180 C. Line the baking sheet with parchment paper.
- Sieve flour, cornflour and baking powder in a bowl. Add desiccated coconut and keep aside.
- In a large bowl, beat ghee and sugar until creamy.
- Add vanilla essence and beat again.
- Gradually work in the flour mixture, mixing with your hands until the dough comes together.
- Divide the dough into equal sized balls, roll in extra coconut. Shape and flatten slightly with your palms. Keep pressing the edges to form a smooth cookie.
- Arrange on the prepared baking sheet, 1" apart. Bake for 12 - 14 minutes until they turn golden.
- Remove from oven and let cool on the baking sheet for a minute. Transfer to a wire rack to cool completely, then store them in an air-tight container.

These cookies look scrumptious and so cute that you've shaped them into petals too! I love coconut - would be tempted to use butter instead but they'd probably not taste the same.

But I do bake coconut cookies every now and then friends are coming over, so thank you for this recipe!:)
My family doesn't like it either, but this recipe can be easily divided to make a small batch. Hope you enjoy the recipe :)
