Peanut Butter Shortbread ... Rich and delicious shortbread with peanut butter and chopped peanuts. They are pretty simple to make. Just mix ingredients with your fingers, press in a pan and bake till lightly brown. Cut in wedges & enjoy this lovely treat!
Peanut Butter Shortbread

Makes : 16 wedges
Ingredients :
- 1/2 cup unsalted butter, softened
- 1/2 cup castor sugar
- 1/4 cup creamy peanut butter
- 2 cups all-purpose flour
- 1/4 cup peanuts, chopped ( optional )
- 6 ounces semisweet chocolate chips, melted
Method :
- Preheat oven to 300 F / 150 C.
- In a bowl, combine butter, sugar, peanut butter and flour with your fingers until mixture resembles coarse meal.
- Press mixture evenly into an ungreased 8 inch tart pan lined with parchment paper.
- Press in the peanuts on top, if using.
- With a knife or fork, prick decorative wedges in the dough. Bake for approx. 1 hour or until lightly browned.
- While shortbread is still warm, remove tart rim and cut into wedges.
- Let shortbread cool completely. Dip or drizzle each wedge in melted chocolate.
