Mini Fruit Cakes ... These mini cakes are filled with fruits, nuts and chocolate. You can add or subtract fruits / nuts to suit your taste. Simple to make, yet so delicious!
Mini Fruit Cakes

Makes : 36 mini cakes
Ingredients :
- 1/3 cup butter, softened
- 1/3 cup castor sugar
- 1/3 cup packed light brown sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 1/3 cup all-purpose flour
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 2 tbsp. milk
- 1 cup coarsely chopped tutti frutti / glazed cherries / candied fruit
- 1/4 cup golden raisins
- 1/4 cup dried black currants
- 1/4 cup coarsely chopped almonds
- 2/3 cups chocolate chunks / chocolate chips ( optional )
- Extra chocolate, melted for drizzle
Method :
- Heat oven to 180 C / 350 F. Lightly grease or paper-line mini muffin cups.
- Beat butter, castor sugar and brown sugar in large bowl until creamy.
- Beat in egg and vanilla extract until light and fluffy.
- Stir together flour, baking powder, baking soda and salt in a separate bowl; gradually mix into butter mixture.
- Add milk; stir until blended. Stir in tutti frutti, raisins, currants, almonds and chocolate chips.
- Spoon ( 1 heaping tablespoon ) batter into muffin cups.
- Bake 18 to 20 minutes or until wooden pick inserted in center comes out clean.
- Cool 5 minutes; remove from pans to wire rack. Cool completely.
- Drizzle melted chocolate over top of mini cakes, if desired.
