Christmas Shortbread ( Chocolate Almond Cookies ) ... Almond flavored shortbread cookies! Just a drizzling of melted chocolate and a sprinkling of chopped almonds turn these simple to make cookies into delicious treats!
Christmas Shortbread ( Chocolate Almond Cookies )

Makes : 40 cookies, depending on the size and shape
Ingredients :
- 125 gm. butter, softened
- 1/2 cup caster sugar
- 1/4 tsp. almond essence
- 1 cup plain flour
- 1/4 cup cornflour
- Dark chocolate, melted; as required
- Almonds, sliced or finely chopped; as required
Method :
- Preheat oven to 160 C. Line baking tray with baking paper.
- Using an electric mixer, beat butter, sugar and almond essence until light and fluffy.
- Add flours. Stir until well combined.
- Turn out onto a lightly floured surface. Knead until smooth.
- Divide dough into 2 portions and shape into discs.
- Roll each dough discs between 2 sheets of baking paper until 1/4 inch thick.
- Using cookie cutters, cut out shapes from dough. Re-roll scraps; repeat the process.
- Place on prepared baking trays, 2" apart. Bake for 10 to 12 minutes or until just golden.
- Transfer to a wire rack to cool completely.
- Melt chocolate and put in a zip-lock bag. Cut tip of one corner of the bag and pipe the melted chocolate on top of the cookies. Sprinkle with chopped almonds.
- Alternatively, place melted chocolate in a mug or small bowl. Dip cookies into chocolate to coat half. Allow excess chocolate to drain. Decorate with slivered almonds.
- Place on baking paper and keep aside to set, before serving.
