Lemon Pistachio Wreath Cookies ... Make a special Christmas treat with a refreshing and light flavor. Lemon flavored butter cookies adorned with chopped pistachios to look like the festive Christmas wreaths.
Lemon Pistachio Wreath Cookies

Makes : 30 cookies
Ingredients :
For Cookies :
- 1 cup all-purpose flour
- 3/4 cup plus 1 tablespoon cornstarch
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup unsalted butter, softened
- 1/2 cup plus 1 tablespoon granulated sugar
- 2 large egg yolks, room temperature
- 2 tbsp. fresh lemon juice
- Extra flour ( about 1/4 cup ), plus more for rolling out the dough
- 3/4 cup icing sugar
- 2 tsp. to 1 tbsp. fresh lemon juice
- Hot water; as required
- Pistachios, finely chopped; as required
- Tutti frutti / candied cherries / dried black currants; as required
Method :
- Whisk flour, cornstarch, baking powder and salt in a medium bowl. Set aside.
- Beat butter and sugar in a large bowl with beater / electric mixer until pale and fluffy.
- Beat in yolks and lemon juice. Gradually mix in flour mixture; beat on low speed.
- If the mixture is too soft, add extra flour; a tablespoon at a time until the dough holds together.
- Shape into a disk; wrap in plastic. Refrigerate until firm, about 1 hour.
- Roll out the dough on a lightly floured work surface to ( 1/8 to 1/4 inch ) thick. Using a fluted cookie cutter, cut out wreaths.
- Place 2" apart on paper lined baking sheets. Refrigerate until firm, about 15 minutes.
- While the cookies are chilling, preheat the oven to 180 C.
- Remove cookies from refrigerator. Bake until they are just starting to turn golden around the edges ( about 10 to 12 minutes ).
- Remove from baking sheets. Let cool completely on wire racks.
- Stir together icing sugar and lemon juice in a small bowl. Add hot water, a little at a time until thick enough to spread.
- Dip surface of each cookie in icing or spoon icing evenly on top of cookies, letting it spread over the edges.
- Sprinkle with pistachios / Tutti frutti / candied cherries / dried black currants. Let set on wire racks.
- Cookies can be stored in airtight containers at room temperature up to 1 week.
