Shahi Tukray ( Royal Bread Pudding ) and Award

Shahi Tukray or Royal Bread Pudding ... Shahi Tukray is a popular dessert of South Asian cuisine. As its name suggests, it belongs to royal ( Mughlai ) cuisine. Shahi Tukda has its roots in Pakistani cuisine. It is made of fried bread slices, cooked in thickened sweetened milk and garnished with nuts. A truly divine dessert!

Shahi Tukray ( Royal Bread Pudding )
*******************************************

Serves : 6 - 8

Ingredients :
  • 1 liter milk
  • 1 cup powdered milk
  • 1 to 1 1/2 cup sugar
  • 2 - 3 green cardamoms, ground
  • 6 - 8 bread slices
  • Ghee / oil, for shallow-frying
  • 8 - 10 pistachios, sliced
  • 6 - 8 almonds, sliced
Method :
  • Combine milk, powdered milk, sugar and ground cardamom in a large wide pan.
  • Bring it to a boil over medium heat, stirring constantly.
  • Reduce heat to low and let it simmer until the milk is slightly thickened, stirring occasionally to prevent it from sticking to the bottom of the pan.
  • While the milk is simmering, heat oil in a pan for shallow-frying.
  • Cut the bread slices into triangles and fry until crispy and golden brown.
  • Place the fried bread slices in single layers, in the simmering milk mixture.
  • Cook for 2 minutes and carefully turn them over with a flat spatula and cook the other side for 2 minutes.
  • Remove bread slices carefully from the pan and transfer in a serving plate in a single layer.
  • Pour the thickened milk mixture over slices and garnish with pistachios and almonds.

    28. Ambreen I tried Shahi Tukrey for the first time two weeks ago at a wedding and they were delicious! Since then I have been thinking about recreating them at home, and it looks like you knew that I would come to you for the recipe lol :) These look so delicious! I will try making them soon, probably for my father's birthday in July.
Thank you so much for the award! InshAllah I'll be posting soon so I'll mention it there, the issue I'm having is that currently I'm visiting my parents in a different state, and my husband forgot to pack the USB cord for the camera, so I'm having problems uploading my pictures :( my brother has a camera though so hopefully I can ask him to take some pictures for me :)
