Almond Cookie Sticks ... Simple and easy cookie recipe when you don't have a lot of time. The original recipe has chocolate chips, but there are so many variations you can do with this recipe.
Almond Cookie Sticks

Makes : 36 to 40 cookie sticks
- 1/2 cup canola oil
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1/2 tsp. almond extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1/2 to 3/4 cup almonds, chopped or sliced
Method :
- In a large bowl, combine the oil, sugars, egg and almond extract.
- Combine the flour, baking soda and salt; gradually add to sugar mixture and mix well.
- Divide dough in half. On a greased baking sheet, shape each portion into a 15" x 3" rectangle; placing about 3" apart.
- Sprinkle almonds over dough; press lightly.
- Bake at 160 C for 18 - 20 minutes. Remove from oven & cool for 5 minutes.
- Cut with a serrated knife into 1" strips; remove to wire racks to cool.
- They spread a lot, so make sure to leave plenty of space between each dough log.
- I've baked at a low temperature for a long time.
