Pink Chocolate-filled Kisses



These cookies are soft and crumbly that just melts in your mouth. The ingredients are very simple and they are easy to make. You can use your favorite flavorings or different colors to the dough and even can cut out different shapes.

Pink Chocolate-filled Kisses

Adapted from Bakers Royale

Makes :  24 - 30 cookies, depending on the size

Ingredients :

For Cookies :
  • 1 cup unsalted butter, at room temperature
  • 1/2 cup Icing sugar
  • 1 tsp.  strawberry essence
  • Few drops of pink food coloring
  • 2 cups all-purpose flour
For Chocolate Filling :
  • 2 tbsp.  unsalted butter, at room temperature
  • 2 oz.  semi-sweet chocolate

Method :

For Cookies :
  • Preheat oven to 180 C and line the baking sheet with parchment paper.
  • In a mixing bowl, beat butter and sugar on medium speed until light and fluffy. 
  • Add the strawberry essence and pink food color, beat until combined.
  • Add the flour and beat on low speed until just combined.
  • Scoop a teaspoon of dough and shape into smooth balls, rolling between the palms of your hand. 
  • Place balls 1 inch apart on prepared baking sheet. 
  • Bake for 8 -10 minutes or until bottoms are slightly golden. 
  • Transfer cookies to a wire rack & let cool completely. 
For Chocolate Filling :
  • Place chocolate and butter in a heat proof bowl.
  • Place bowl over simmering water and heat, stirring occasionally until chocolate is melted. 
  • Let cool until chocolate is thickened to spreadable consistency.
To Assemble :
  • Using a small knife or an icing spatula, spread a small amount of filling on the bottom of a cookie. 
  • Place second cookie on top of chocolate to form a sandwich. 
  • Cool sandwiched cookies on a wire rack. Store for up to a week in an airtight container.
