Chicken Tikka Pizza ... Pizza is a popular and delicious dish of Italian origin, that has become extremely popular all over the world. Chicken tikka is Asian style of barbecued chicken and it tastes fabulous as a topping on pizza. It has become widely popular in Pakistan. Try out this simple and easy recipe with a desi touch.
Chicken Tikka Pizza

Makes : 3 ( 9 inch ) pizzaIngredients :
Pizza Sauce :
- 500 gm. fresh tomatoes, chopped
- 1 small onion, chopped
- 1 tsp. garlic paste
- 1 tsp. vinegar
- 1 tsp. ground black pepper
- 1/2 tsp. salt
- 1 tbsp. oil
- 1/2 tsp. ground oregano
- 2 tbsp. ketchup
Chicken Tikka :
- 500 gm. boneless chicken
- 2 tbsp. vinegar
- 1 tsp. crushed red chillies
- 1 tsp. chaat masala
- 1 tsp. garam masala
- 1 tsp. ginger garlic paste
- 1 tsp. salt
- 1 tbsp. oil
- 2 1/4 cup all-purpose flour
- 1 package ( 2 1/4 tsp. ) instant yeast
- 1 tsp. sugar
- 1 tsp. salt
- 1 1/4 cups warm water ( 120 F 0r 48 C )
- 1 egg
- 3 tbsp. cooking oil
- 1 1/2 to 2 cup all-purpose flour, as required
Toppings :
- 1 medium onion, sliced
- 1 capsicum, sliced
- 1 tomato, seeds removed & sliced
- Cheddar cheese, shredded, as required
- Mozzarella cheese, shredded, as required
- 1 tsp. dry oregano
- 1 tsp. crushed red chillies
Method :
Pizza Sauce :
- Blend tomato & onion in a blender.
- Heat oil in a pan, add garlic paste & fry for 1 minute.
- Add blended tomato mixture & all the remaining ingredients.
- Cook on medium heat until sauce is thick. Keep aside & let it cool.
Chicken :
- Combine all ingredients of chicken tikka except oil and marinate for 20 minutes.
- Heat oil in a pan, add the marinated chicken & cook until chicken is done.
- Separately heat a piece of coal until red hot. Place it in a bowl inside the pan.
- Pour few drops of oil over coal and immediately cover the pan. Open after few minutes.
- Remove from pan, cool & cut into chunks.
- In a large mixing bowl, mix ( 2 1/4 cup ) all-purpose flour, yeast, sugar and salt.
- Combine warm water, egg and oil in a small bowl.
- Add this in the flour mixture and beat with an electric mixer on High for 3 minutes.
- Using a wooden spoon, stir in as much of the remaining flour as you can.
- Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic ( 3 to 5 minutes ).
- Shape dough into a ball. Place in a lightly greased bowl, turning once to grease dough surface.
- Cover bowl and let the dough rise in a warm place until double in size ( 50 to 60 minutes ).
- Punch dough down. Turn dough out onto a lightly floured surface.
- Cut dough into three equal portions. Cover and let rest for 10 minutes. Pat each potion of dough into a disk.
Assemble & bake :
- Preheat oven to 220 C. Prepare three ( 9 inch ) pizza pans by greasing with oil, set aside.
- On a lightly floured surface, roll each dough portion out to 9 inch circle. Transfer dough circles to prepared pans.
- Build up edges slightly. Cover and let rise for 20 minutes.
- Prick dough all over with a fork. Spoon 1/3 of the tomato sauce on each pizza crust and spread to within 1" of edge.
- Sprinkle little shredded mozzarella cheese on sauce. Place chicken chunks, sliced onion, tomato & capsicum.
- Sprinkle with cheddar & mozzarella cheese. Sprinkle dry oregano & little crushed red chillies.
- Bake each pizza for 16 - 18 minutes or until crust is golden brown and cheese is melted.
Notes :
- I used about 227 gm. pack of each cheese.
- The chicken was plenty for the recipe, so you can freeze the leftover chicken to use later.
