Pepper Cumin Cookies and Sunshine Award


Pepper Cumin Cookies ... A unique combination of flavors, salty & spicy with a hint of sweetness.

Pepper Cumin Cookies

Makes : 30 cookies

Ingredients :
  • 2 cups all-purpose flour
  • 6 tbsp.  sugar
  • 1 tsp.  salt
  • 2 tsp.   grated lemon zest
  • 1 tsp.  black peppercorns, cracked
  • 1 tsp.  cumin seeds, cracked
  • 1 cup unsalted butter, softened slightly and cut into pieces
  • 1 tsp.  vanilla extract
Method :
  • Preheat the oven to 180 C. Line a baking sheet with parchment / baking paper.
  • Put the flour, sugar, salt, lemon zest, cracked peppercorns and cumin seeds in a food processor and pulse to combine.
  • Add the butter and vanilla and pulse until mixture just forms a dough.
  • Place the dough on a work surface and shape into 1-inch balls.
  • Place them 2 inches apart on the baking sheet and flatten each cookie with the palm of your hand.
  • Bake at 180 C for about 12 - 14 minutes or until lightly browned.
  • Remove from the baking sheet and place them on a rack to cool.
Note :
  • Watch carefully as these cookies brown quickly. Remove them from the oven as soon the edges just start to turn golden.
