Fruit Vegetable Macaroni Salad ... Cool, refreshing and creamy macaroni salad with fruits and vegetables, tossed in a creamy mayo dressing. This easy and simple salad can be served as a side dish or as a complete light meal on its own. You can add or subtract any fruit or vegetable you wish. Isn't it looks delicious and fulfilling!
Fruit Vegetable Macaroni Salad

Ingredients :- 1 cup uncooked elbow macaroni
- 1 cup cabbage, finely shredded
- 1 cup carrots, cubed & boiled
- 1 cup green peas or chickpeas, boiled
- 1 cup potatoes, cubed & boiled
- 1 cup apple, peeled & diced
- 1 cup pineapple chunks, drained
- 200 ml. pack cream
- 200 ml. mayonnaise
- Salt and black pepper, according to taste
- 4 tbsp. Icing sugar
- Milk or pineapple juice, as required
- Cook macaroni according to package directions. Rinse with cold water and drain.
- In a large serving bowl, combine macaroni, chickpeas, fruits and vegetables.
- In a medium bowl, mix cream, mayonnaise and icing sugar.
- Season with salt and pepper, whisk until smooth.
- Pour the creamy dressing over the salad in the large bowl and toss well to coat.
- If the salad is too thick, mix in little milk or juice.
- Place the salad in the refrigerator, covered until well chilled.
