Churros ( or Spanish doughnuts ) are deep-fried sticks of dough, sprinkled with sugar and served with warm chocolate sauce for dipping. The dough is a mixture of flour, water and salt. These taste best when they are freshly fried.

Ingredients :
- 300 ml. water
- 175 gm. plain flour
- Pinch of salt
- 2 eggs, beaten
- Groundnut or sunflower oil, for deep frying
- Caster sugar mixed with ground cinnamon, to coat the churros
Method :
- Bring the water to the boil in a heavy pan. When it is boiling furiously, tip in all the flour and salt, and beat vigorously until it becomes a smooth & stiff paste and the ball of the dough leaves the side of the pan.
- Remove from heat and beat in the eggs gradually until the mixture is smooth and glossy.
- Put the mixture into a large piping bag fitted with a large star nozzle.
- Heat the oil in a large saucepan on medium heat.
- Working in batches, pipe sections of dough directly into the oil, about 4 inches long. Using a small knife or your finger, cut the dough strips off at the nozzle.
- Fry them until golden brown, turning occasionally.
- Remove the churros from the pan with a slotted spoon and toss in cinnamon sugar.
- Serve immediately with warm chocolate sauce, if desired.

Mariam, I've used a piping bag fitted with a large star nozzle. Just put the mixture in the piping bag and pipe out directly into the hot oil. Will try to take picture of this step, next time :)
