Kharay Masaly Ka Gosht or Stew ... A quick and easy stew recipe, meat cooked with onions, tomatoes & whole spices. I have previously shared my family recipe for Stew here using onions & yoghurt. My aunt makes an excellent stew with tomatoes. I was looking for the recipe when I came across this recipe made in a Pakistani food show, tried it & it turned out great. It was quite spicy for us, so I made some changes to reduce the heat. Here's the recipe:

Recipe by Pakistani cooking expert Shireen Anwar
Serves : 4
Ingredients :
( A ) :
- 1/2 cup oil
- 500 gm. mutton / beef / chicken pieces
- 2 large or 3 medium onions, thinly sliced ( I used 250 gm. )
- 3 tomatoes, sliced ( I used 250 gm. )
- 2 tbsp. chopped garlic
- 2 tbsp. chopped ginger
- 8 - 10 whole red chillies ( I used 4 )
- 6 small green chillies ( I used 3 large )
- 3 green cardamoms
- 5 - 6 cloves
- 5 - 6 black pepper
- 1 large / black cardamom
- 1 inch cinnamon stick
- 1 tsp. white cumin seeds
- 1 1/2 tsp. crushed red chillies
- 1 1/2 tsp. crushed coriander seeds ( not in the original recipe )
- 1/ 8 tsp. nigella seeds / kalonji ( not in the original recipe )
- 1 1/2 tsp. salt
- 3 tbsp yoghurt
- 1/4 tsp. garam masala powder
- 2 tbsp. fresh coriander leaves, chopped
- 1 green chilli, chopped
Method :
- Combine all ingredients of ( A ) in a pan.
- If using mutton or beef, add enough water to cook the meat.
- Cook, covered, over medium heat until meat is well done.
- Now reduce water, if any by cooking on high heat, stirring continuously.
- Add ingredients of ( B ), cook until curry leaves oil.
- Dish it out and garnish with chopped green chilies and coriander.
- Serve with naan or chapati.
