Curried Chicken Pita Wraps
*******************************
Ingredients :
For Chicken :
- 250 gm. boneless chicken, small cubes
- 1/2 cup yogurt
- 1 tsp. vinegar
- 1/2 tsp. salt
- 1 tsp. red chilli powder
- 1 tsp. crushed coriander seeds
- 1 tsp. ginger garlic paste
- Orange food color, optional
- 1 tbsp. oil
For Salad :
- 1/4 cup grated carrot
- 1/4 cup thinly sliced cabbage
- Mayonnaise, as required
- Pinch of ground black pepper
Others :
- 3 - 4 pita bread
- Ketchup or chili garlic sauce, as required
Method :
- Combine all ingredients of chicken except oil in a bowl and marinate for at-least half an hour.
- Heat oil in a pan, add the marinated chicken & cook on medium heat until the water dries and the chicken is cooked. ( This can be made in advance; cool after cooking, cover and refrigerate ).
- To prepare salad, combine all ingredients together and keep aside.
- Heat pita bread slightly in a pan, remove and spread ketchup or chili garlic sauce evenly on one side of pita bread.
- Place cooked chicken evenly in centers of pitas; top with salad.
- Fold in both sides of each pita to make rolls and wrap in paper.

This is a speedy hassle-free twist on a traditional coronation chicken with extra salad. Instead of mayonnaise, I use low fat or Greek yogurt. Anyways, thanks for this chicken recipe!
