Chicken Vegetable Toasted Sandwich ... Toasted bread sandwiches stuffed with a delicious chicken and vegetables filling. Start your day with this wholesome and healthy sandwich, serve as a snack or as a light meal.
Chicken Vegetable Toasted Sandwich

Ingredients :
For Filling :
- 1 cup peeled and grated carrot
- 1 cup chopped spring onions, green part only
- 1 cup finely shredded cabbage
- 1 cup boiled and shredded chicken
- 2 eggs, boiled & chopped ( optional )
- 1 tbsp. soya sauce
- 2 tbsp. chilli sauce
- 1 tsp. black pepper
- 1/2 tsp. salt ( or to taste)
- 1 tbsp. cooking oil
For Toast :
- Bread slices, as required
- Melted butter or cooking oil, for greasing
Method :
- Heat oil in a pan or wok. Add all the ingredients of filling.
- Cook on high heat, stirring until vegetables are slightly soft.
- Remove from heat and transfer mixture to a bowl. Leave to cool.
- Heat the sandwich maker. Brush one side of bread slice with butter / oil and place on a plate with butter side down.
- Spread some filling on the slice, cover with another bread slice. Brush top of slice with butter / oil.
- Place the sandwich in the sandwich-maker, close the lid and toast until golden brown.
- Enjoy warm with ketchup, chilli garlic sauce or green chutney.
