Mango Ice Cream & 7 Links Challenge

I have been down with fever since last few days. So, here is a recipe which has been sitting in my drafts for quite some time. Mango ice cream ... made with a cooked custard mixture, mango puree and cream.

Mango Ice Cream
********************

*  Makes : About 1 liter


Ingredients :
  • 500 ml. milk
  • 1/2 cup sugar
  • 1/2 cup dry milk powder
  • 2 tbsp. vanilla / mango custard powder
  • 1 cup mango puree, chilled
  • 200 ml. whipping cream, chilled
  • 1/4 tsp. mango essence
    Method :
    • Combine 400 ml. milk and sugar in a heavy saucepan. 
    • Place the saucepan over a medium heat and stir until the sugar dissolves.
    • In a small bowl, mix milk powder, custard powder & remaining milk.
    • Slowly add this mixture to the milk in the pan and cook, stirring constantly until the custard thickens slightly and coats the back of a wooden spoon.
    • Immediately transfer it into a clean bowl & leave to cool. 
    • Combine cooled custard, mango puree, cream and mango essence in a large bowl. Mix well.
    • Pour the mixture in an airtight plastic container, cover and place it in the freezer for about 30 - 40 minutes until the mixture is starting to set around edges of container.
    • Remove from the freezer and beat the mixture until smooth. Return to freezer for another 30 - 40 minutes.
    • Repeat this process for at least two more times.
    • Allow the mixture to freeze over night or until set. 
    • Scoop out the ice cream and serve immediately.
    Note :
    • Adjust the amount of sugar according to your taste, as mangoes come in many varieties, each varying in taste.

    4. The most helpful post :  Kabuli Chanay ka Salan ( White Chickpeas Curry ) is the second most viewed recipe. Some readers commented that they've never tried the combination of chickpeas & lentil before. I hope this was helpful to others.


    5. The post that was surprisingly successful :  Mango Cake Balls. I never thought that this simple recipe would get such a great response. So far, it is the most commented recipe :)


    6. The post that did not get the attention it deserves :  Pineapple Cream Cake. I have made this cake several times, always a great hit. Unfortunately, it didn't get much attention.


    7. The post I am most proud of Tangerine Butterfly Cupcakes . Although, you'll find many ideas to make butterfly cupcakes. But, I haven't seen something like this.
