Nutty Jam Thumbprint Cookies


Nutty Jam Thumbprint Cookies ... Celebrate Mother's Day in a special way with these delicious nutty cookies. These thumbprint cookies are made with a soft cookie dough, formed into balls, rolled in nuts and filled with jam. Perfect to make any occasion special!

Nutty Jam Thumbprint Cookies

Makes : 18 cookies


Ingredients :
  • 1/2 cup butter, at room temperature
  • 1/4 cup caster sugar
  • 1 large egg
  • 1 tsp.  vanilla essence
  • 1 cup self-rising flour
  • 1/2 cup peanuts or any nuts, coarsely chopped
  • Strawberry jam, as required

Method :
  • Preheat oven to 350 F / 180 C. Line a baking sheet with parchment paper.
  • Beat butter and sugar in a large bowl until light and creamy.
  • Add egg and vanilla essence, beat well until combined.
  • Add sifted flour and beat just until combined.
  • Drop rounded teaspoonfuls of mixture into peanuts. Roll into balls.
  • Place on baking sheet, leaving about 2 inches space between each cookie.
  • Press thumb or end of a wooden spoon into center of each cookie to make an indentation / well, do not press all the way to the cookie sheet.
  • Using a teaspoon, fill each indentation / well with little jam, being careful not to overfill.
  • Bake for 12 - 14 minutes or until edges are lightly browned. 
  • Remove from oven and place on a wire rack to cool completely. 
Notes :
  • The dough will be quite soft. If it is too soft to make balls, refrigerate for few minutes until firm enough to handle.
  • Leave plenty of room between each unbaked cookie as they will spread out a bit as they bake.
  • Use your favorite nuts and jam for the coating and filling.
  • These cookies are good even without jam.
  • Jam filled cookies can be stored for a couple of days while the plain cookies for about a week.
