Peanut Butter Shortbread


Peanut Butter Shortbread ... Rich and delicious shortbread with peanut butter and chopped peanuts. They are pretty simple to make. Just mix ingredients with your fingers, press in a pan and bake till lightly brown. Cut in wedges & enjoy this lovely treat!


Peanut Butter Shortbread
*****************************

Makes : 16 wedges
 
Ingredients :

  • 1/2 cup unsalted butter, softened
  • 1/2 cup castor sugar
  • 1/4 cup creamy peanut butter
  • 2 cups all-purpose flour
  • 1/4 cup peanuts, chopped ( optional )
  • 6 ounces semisweet chocolate chips, melted

Method :
  • Preheat oven to 300 F / 150 C.
  • In a bowl, combine butter, sugar, peanut butter and flour with your fingers until mixture resembles coarse meal. 
  • Press mixture evenly into an ungreased 8 inch tart pan lined with parchment paper. 
  • Press in the peanuts on top, if using.
  • With a knife or fork, prick decorative wedges in the dough. Bake for approx. 1 hour or until lightly browned. 
  • While shortbread is still warm, remove tart rim and cut into wedges. 
  • Let shortbread cool completely. Dip or drizzle each wedge in melted chocolate.
