Cut-out Sesame Cookies


Cut-out Sesame Cookies ... Simple, easy & delicious custard-flavored cookies!

Cut-out Sesame Cookies

Recipe by from nigella.com

Makes: 7 1/2 dozen ( about 90  ) cookies, depending on the size & thickness of cookies

Ingredients :
  • 280 gm.  all-purpose flour
  • 1/2 tsp.  baking powder
  • 150 gm.  confectioner’s sugar ( Icing sugar )
  • 50 gm.  vanilla custard powder 
  • 200 gm.  butter, cubed 
  • 150 gm.  sesame seeds
  • 2 to 3 tsp.  milk 

Method :
  • Preheat the oven to 180 C.
  • Combine flour, baking powder, sugar and custard powder in a food processor.
  • Add butter cubes and half of the sesame seeds, process just until the mixture resembles like breadcrumbs. ( Alternatively, mix butter in the flour with your fingertips till it resembles like bread crumbs).
  • Gradually, add just enough milk to bring the dough together, a teaspoon at a time.
  • Turn the dough out onto a on a lightly floured surface and gently bring it together to form a ball.
  • Roll out the dough, sprinkle remaining sesame seeds and cut with the cookie cutter.
  • Place on a lined baking tray and bake for 12 -14 minutes or until edges turn light brown.
  • Remove from oven, let them cool on the baking tray for 5 minutes and then transfer to the wire rack to cool completely.

  7. I've always been a fan of sesame seeds. They're used a lot in Greek and Macedonian baking. I can certainly see myself giving these cookies a try. Thanks for sharing!

    1. Custard powder is actually a cornflour based powder. Use equal quantity of corn flour and add little vanilla :)

    amounts, could you enlighten plz? would love to start these right away. Many years ago i worked with a lady from the middle east, she made cookies much like these...I neglected to ask her for the recipe before she left. She called them her 'bird seed cookies' due to the sesame seeds. Thank you, [selfrun@aol.com}

    1. I usually prefer using kitchen scale because weighing in grams is more accurate for baking. It's a little tricky to convert weight to volume. According to my kitchen scale :
      1 ounce = 29 grams
      4 ounces = 113 grams

      Cup Equivalents:
      Butter or Sugar ( 1 oz. = 2 tbsp. = 1/8 cup )
      Flour ( 1 oz. = 1/4 cup )
