Almond Cookie Sticks


Almond Cookie Sticks ... Simple and easy cookie recipe when you don't have a lot of time. The original recipe has chocolate chips, but there are so many variations you can do with this recipe.

Almond Cookie Sticks

Source : Taste of Home 

Makes : 36 to 40 cookie sticks
Ingredients :
  • 1/2 cup canola oil
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 tsp.  almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp.  baking soda 
  • 1/8 tsp.  salt
  • 1/2 to 3/4 cup almonds, chopped or sliced

Method :
  • In a large bowl, combine the oil, sugars, egg and almond extract.
  • Combine the flour, baking soda and salt; gradually add to sugar mixture and mix well.
  • Divide dough in half. On a greased baking sheet, shape each portion into a 15" x 3" rectangle; placing about 3" apart.
  • Sprinkle almonds over dough; press lightly.
  • Bake at 160 C for 18 - 20 minutes. Remove from oven & cool for 5 minutes. 
  • Cut with a serrated knife into 1" strips; remove to wire racks to cool. 
Notes :
  • They spread a lot, so make sure to leave plenty of space between each dough log.
  • I've baked at a low temperature for a long time.
