Moist Orange Cake


Moist Orange Cake ... A delicious, moist and refreshing cake; bursting with orange flavor and drizzled with orange syrup. The cake itself is good enough without the syrup but great with the the syrup.

This recipe comes from a dear friend Magali who is a passionate baker from Mexico. Do check out her blog, I"m sure you will love her tasty creations. Thank you Magali for sharing this wonderful recipe :)

Moist Orange Cake

Adapted from : Magali March

Serves : 6 - 8

Ingredients :

For Cake :
  • 1 1/4 cups plain flour
  • 2 tsp.  baking powder
  • 1/2 cup butter, softened
  • 3/4 cup castor sugar
  • 2 eggs
  • 1/2 tsp.  vanilla essence
  • 1/3 cup fresh orange juice 
For Syrup :
  • 1/4 cup castor sugar
  • 1/3 cup fresh orange juice

Method :

For Cake :
  • Preheat oven to 180ºC. Grease & line a 7 inch round cake pan.
  • Sift flour & baking powder in a bowl, keep aside.
  • In a separate large bowl, beat butter and sugar until light and fluffy.
  • Add in eggs, one at a time, and beat well. Beat in vanilla.
  • Add sifted flour alternately with orange juice, mixing until well blended. 
  • Pour the batter into prepared cake pan. Bake for about 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from the oven & transfer to a serving plate. Peel off paper, let cool. 
  • While the cake is cooling, prepare syrup.
For Orange Syrup : 
  • Combine sugar and orange juice in small saucepan.
  • Bring to a boil and cook for 2 to 3 minutes or until sugar dissolves.
  • Prick top of cake with a fork, pour the syrup over warm cake.
  • Set aside for 30 minutes, so the syrup is absorbed into the cake. 
  • Cut the cake into wedges and serve.

      1. Castor or caster sugar is very fine granulated sugar. You can make your own by grinding granulated sugar in a food processor or spice grinder until it reaches fine, but not powdery consistency. Thanks Diane for the invite to link up :)

    59. Yes, it's a very soft fluffy and moist cake. But this recipe lacks salt. I've used unsalted butter and added less than 1/2 tsp kosher salt. Plus orange zest and plain no-fat yogurt (and thus baking soda). I got a good cake!
