Peanut Cookies & Award


Peanut Cookies ... These bite-sized cookies are loaded with peanuts. They are slightly crunchy on the outside with the melt-in-the-mouth texture. This recipe is derived from these Sesame cookies. I got the idea of using ground peanuts instead of sesame seeds while preparing these sesame cookies. They turned out really good. Next time, I will add some chopped peanuts in the dough too. Hope you enjoy them as much as we did :)


Peanut Cookies

Makes : 6 dozen

Ingredients :
  • 125 gm. ghee ( clarified butter )
  • 150 gm.  powdered sugar
  • 1 egg
  • 1/2 tsp.  vanilla essence
  • 190 gm.  plain flour
  • 1 tsp.  baking powder
  • 90 gm.  finely ground peanuts
  • Milk, as required

Method :
  • Melt ghee in a pan or microwave, let it cool at room temperature. Then refrigerate ( or freeze ) until it starts to turn solid. Remove and bring to room temperature.
  • Preheat oven at 180 C. Line the baking tray with parchment paper.
  • In a large bowl, beat ghee and sugar until creamy. 
  • Add egg & vanilla and beat well.
  • Sieve baking powder with flour.
  • Gradually work in the flour mixture and ground peanuts. Mix gently with hands until it comes together.
  • If the dough is too dry to hold, add little milk, a tablespoon at a time, until it comes together.
  • Roll out the dough on a lightly floured surface.
  • Cut them using a cookie cutter, place a peanut halve on top of each cookie. 
  • Arrange them on the baking tray, 1" apart. Bake for 8 - 10 minutes. Remove from oven as soon as they turn golden.
  • Remove from the baking tray and let them cool on the wire rack.
