Ramadan Kareem:Kharay Masaly Ka Gosht or Stew & Award


Kharay Masaly Ka Gosht or Stew ... A quick and easy stew recipe, meat cooked with onions, tomatoes & whole spices. I have previously shared my family recipe for Stew here using onions & yoghurt. My aunt makes an excellent stew with tomatoes. I was looking for the recipe when I came across this recipe made in a Pakistani food show, tried it & it turned out great. It was quite spicy for us, so I made some changes to reduce the heat. Here's the recipe:


Kharay Masaly Ka Gosht or Stew

Recipe by Pakistani cooking expert Shireen Anwar

Serves : 4

Ingredients :

( A ) :
  • 1/2 cup oil
  • 500 gm. mutton / beef / chicken pieces 
  • 2 large or 3 medium onions, thinly sliced ( I used 250 gm. )
  • 3 tomatoes, sliced ( I used 250 gm. )
  • 2 tbsp. chopped garlic
  • 2 tbsp. chopped ginger
  • 8 - 10 whole red chillies ( I used 4 )
  • 6 small green chillies ( I used 3 large )
  • 3 green cardamoms
  • 5 - 6 cloves
  • 5 - 6 black pepper
  • 1 large / black cardamom
  • 1 inch  cinnamon stick
  • 1 tsp. white cumin seeds
  • 1 1/2 tsp. crushed red chillies
  • 1 1/2 tsp. crushed coriander seeds ( not in the original recipe )
  • 1/ 8 tsp. nigella seeds / kalonji ( not in the original recipe )
  • 1 1/2 tsp. salt
( B) :
  • 3 tbsp yoghurt
  • 1/4 tsp. garam masala powder
( C ) :
  • 2 tbsp. fresh coriander leaves, chopped
  • 1 green chilli, chopped
  
Method :
  • Combine all ingredients of ( A ) in a pan.
  • If using mutton or beef, add enough water to cook the meat.
  • Cook, covered, over medium heat until meat is well done.
  • Now reduce water, if any by cooking on high heat, stirring continuously.
  • Add ingredients of ( B ), cook until curry leaves oil.
  • Dish it out and garnish with chopped green chilies and coriander.
  • Serve with naan or chapati.
