Rolled Coconut Cookies


Rolled Coconut Cookies ... These cookies are great for coconut lovers. Simple basic ingredients & easy to make; just make balls, roll in coconut and bake :)

Rolled Coconut Cookies
**************************

*  Prep. Time : 20 minutes
*  Cook Time : 12 - 14 minutes
*  Makes : 18 cookies

Ingredients :
  • 125 gm butter, softened
  • 1/3 cup icing sugar
  • 1/2 tsp. vanilla essence
  • 1/2 cup plain flour
  • 1 tbsp. cornflour
  • 1 cup desiccated coconut plus extra for rolling

Method :

  • Heat oven to 180° C.
  • Sift flour and corn flour together in a bowl.
  • In a mixing bowl, beat butter and icing sugar until creamy.
  • Add vanilla and beat for few seconds.
  • Add flour mixture & coconut to the butter mixture and mix until it forms a soft dough.
  • Divide the mixture into 18 equal parts and shape into balls.
  • Now roll these balls in extra coconut to coat.
  • Place cookies on paper lined cookie sheets and press to slightly flatten.
  • Bake for 12 - 14 minutes or until crisp and golden brown.
  • Remove to a wire rack to cool.

  5. Looks crispy.. Must be very tasty. Btw, what do you mean by dessicated coconut, is it coconut powder or coconut cream powder or frozen(shredded) coconut??

    usually at eid celebration in syawal, we always have lots and lots of cookie varieties to serve guests..up to even 20 types plus dishes.. me and my sisters always buy ready made every year :)))
