Microwave Banana Pudding ... 3 Variations


Quick, easy and so delicious!!! Thanks to BBC Good Food for this lovely recipe. I loved the chocolate chips and raisin version more than the plain one. I think that this would have been better with a sauce though.

Microwave Banana Pudding ... 3 Variations

Recipe adapted from  BBC Good Food

*  Prep. Time : 10 minutes
*  Cook Time : 3 1/2  minutes
*  Serves : 3

  • 50 gm. butter, softened, plus extra for greasing
  • 1 ripe banana (Use over-ripe bananas for this recipe ... the browner and softer the bananas, the stronger the flavor when baked )
  • 50 gm. light brown sugar
  • 50 gm. plain flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. vanilla essence
  • 1 egg
  • 1 tbsp. milk
  • Icing sugar, toffee sauce and ice cream, to serve, if you like

    • Lightly butter 3 non-metallic pudding moulds / individual glass bowls.
    • Melt the butter in a microwave safe bowl on High for ( 30 sec. - 1 min.) until melted. 
    • Add 3/4 banana, mash into the melted butter.
    • Add the sugar, vanilla, egg and milk. Mix together well.
    • Mix in flour and baking powder until smooth.
    • Spoon the mixture into prepared bowls, taking care not to fill them more than half full or they will spill over when cooked.
    • Slice the remaining banana over the top, then return to the microwave and cook on High for 2 1/2 minutes until cooked through and risen. 
    • Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

      Variations:
    • Divide the mixture in 3  equal parts.
    • Spoon one part in the mould / bowl, place banana slice on top and microwave as above.
    • Add (1 tsp.) chocolate chips in one part, spoon in the mould / bowl, place banana slice on top and microwave as above.
    • Add (1 tsp.) raisins in the other part, spoon in the mould / bowl, place banana slice on top, sprinkle (1 tsp.) brown sugar and microwave as above.

      Danish Cookies


      Danish Cookies ... Vanilla flavored cookie dough, extruded nicely with cookies press / piping bag and  chocolate chip on the top as 'the crown'. Perfect for teatime ! The recipe was quite simple, here I just added some special touch to these :)


      Danish Cookies

      Recipe adapted from Masala Mornings by Shireen Anwer on Masala TV.

      *  Prep. Time : 20 minutes
      *  Cook Time : 10 - 12 minutes
      *  Makes : 30 - 36 cookies ( depending on the size )

      • 100 gm. Ghee / Butter
      • 75 gm. Caster sugar
      • 1 tsp Vanilla essence
      • 1 Egg
      • 150 gm. Plain Flour 

      • Melt ghee in a small pan (or Microwave 2 - 3 min ), transfer in a bowl and freeze until it starts to become solid.
      • Now remove from freezer and bring to room temperature until soft.
      • Preheat oven at 180 C.
      • Beat ghee and sugar till creamy.
      • Add vanilla essence and beaten egg; beat for 2 minutes.
      • Now fold in the flour and mix gently to a soft & smooth dough ( If dough is too soft, add extra flour ).
      • Fill cookie press / piping bag with the dough, form desired shapes on ungreased baking tray about 1" apart.
      • Bake at 180 C for about ( 10-12 minutes ) until edges are golden .
      • Cool slightly on tray,then transfer to a wire-rack to cool completely.


      Making Crown Cookies
      • Fill piping bag with cookie dough, force the dough through the piping bag onto baking tray / cookie sheet.
      • Decorate the points with mini chocolate chips as 'the crown' or make faces.
      • Bake as directed above.

      Coconut & Milk Ladoo


      A very easy and quick recipe. With only 4 ingredients, you can make a delicious sweet in minutes. I colored the desiccated coconut to add some color. Just add a drop of food color to the coconut and mix with a spoon until you get your desired color.

      Coconut  & Milk Ladoo

      * Prep. Time : 10 minutes
      * Makes : 12 Ladoo or Balls

      • 1 cup dry milk powder
      • 1 cup desiccated coconut + extra for rolling
      • 5 - 6 tbsp condensed milk (or as required)
      • Sliced pistachios / almonds
         
      • Combine the first three ingredients in a bowl and mix well.
      • Make small balls of the mixture, about the size of a table tennis ball.
      • Roll the balls in extra desiccated coconut. Place sliced pistachios/almonds on top.
      • Keep in refrigerator once done.

      Crunchy Peanut Butter Cookies

      Crunchy Peanut Butter Cookies...Crispy around the edges, Soft & chewy in the center.Refrigerate the balls for about 15 minutes or until firm before baking.

      Crunchy Peanut Butter Cookies


      Recipe taken from Angie's Recipes

      *  Prep. Time : 20 minutes
      *  Cook Time : 12 minutes
      *  Makes : 38 Cookies
      • 80 gm. white sugar
      • 80 gm. light brown sugar
      • 1/8 tsp salt
      • 100 gm. butter or margarine
      • 100 gm. crunchy peanut butter
      • 1 egg
      • 1/2 tsp vanilla extract
      • 150 gm sifted all-purpose flour
      • 1/2 tsp baking soda
      • 1/2 tsp baking powder
      • Hazelnuts / Cashew nuts / Almonds

        • Preheat oven to 180 C.Line baking sheet with parchment paper.
        • Cream white and brown sugars, salt, butter and crunchy peanut butter thoroughly in large mixing bowl.
        • Beat egg and vanilla into creamed mixture until light and fluffy.
        • Into another container, sift together flour ,baking powder and soda.
        • Blend flour mixture into creamed ingredients gradually.
        • Roll level tablespoons of cookie dough into balls and place 2 inches apart on lined baking sheet.
        • Lightly press with nuts to slightly flatten the cookies.
        • Bake at 180 C for 12 minutes or until lightly browned around edges.
        • Cool slightly on the baking sheet until the cookies have firmed up a bit ; then transfer to a wire rack to cool completely.
        • Store in an airtight container.

          Rainbow Cake with Pink Butter-cream Frosting


          Rainbow Cake with Pink Butter-cream Frosting

          * Prep. Time : 40 minutes
          * Cook Time : 35 - 40 minutes
          * Serves : 6 - 8

          Cake :
          • 120 gm plain flour
          • 2 1/4 tsp baking powder
          • 2 eggs, yolks & whites separated
          • 120 gm butter, soft
          • 120 gm castor sugar
          • 1/2 tsp vanilla essence
          • 1 tbsp milk
          • 1 tbsp cocoa powder
          • 1 tbsp icing sugar
          • Food colors ... Pink,Yellow, Green,etc.
          Butter-cream :
          • 100g butter,softened
          • 140g icing sugar,sifted
          • Few drops of vanilla/strawberry extract (optional)
          • Pink food color
          Decoration :
          • White chocolate chips,as required
          • Color sprinkles,as required
          Cake :
          • Preheat oven at 180 C.
          • Grease an 8" inch round cake tin,line base with greaseproof paper.
          • Sift plain flour and baking powder together in a bowl.
          • Whip egg whites in a dry & clean bowl till soft peaks form.
          • In a separate bowl, beat butter and sugar until light and fluffy.
          • Beat in egg yolks.Fold in egg whites in butter mixture.
          • Now gradually fold in the flour mixture.
          • In a small bowl,combine cocoa powder, icing sugar and milk; mix until smooth.
          • Divide the cake batter into 5 portions.
          • Mix in the colourings to the 3 portions, mix cocoa mixture in one portion while keeping one plain.
          • Pour the batter into the centre of your greased cake tin one color at a time.
          • Repeat until you are done with all the batter.
          • Bake for about 35-40 minutes or till cake is done.
          • Turn cake on wire rack and leave to cool.
          Butter-cream :
          • Beat the butter until smooth and creamy.
          • Gradually beat in icing sugar.
          • Beat in vanilla/strawberry extract and food color.
          • Spread the butter cream over the top & sides of the cooled cake.
          • Spoon remaining icing into a pastry bag fitted with desired decorating tip; pipe icing decorations onto cake as desired.
          • Sprinkle white chocolate chips & color sprinkles on top.Press white chocolate chips on the sides of the cake.

          Almond & Chocolate Chips Jumbles


          This is a basic sugar cookie dough recipe which I found at Real Simple.There are dried cherries, instead of chocolate chips, in the original recipe.I've also made these with raisins.

          Almond & Chocolate Chips Jumbles

          Recipe adopted from Real Simple

          * Prep. Time : 20 minutes
          * Cook Time : 16 - 20 minutes
          * Makes : 40 cookies

          • 2 1/2 cups all-purpose flour, spooned and leveled
          • 1/4 tsp baking soda
          • 1/8 tsp salt
          • 1 cup unsalted butter, at room temperature
          • 3/4 cup sugar
          • 1 large egg
          • 1 tsp vanilla extract
          • 1 cup chocolate chips
          • 1 cup chopped almonds
          • In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
          • Using an electric mixer, beat the butter and sugar until smooth.
          • Add the egg and beat until fluffy, about 2 minutes. Beat in the vanilla.
          • With the mixer on low, gradually add the flour mixture, mixing until just incorporated.
          • Stir in chocolate chips and chopped almonds.
          • Drop tablespoon-size mounds of dough onto lined baking sheets.
          • Bake at 350° F until just beginning to brown, 16 to 20 minutes.
          • Cool slightly on baking sheets, then transfer to wire racks to cool completely.
