Rose & Pistachio Cupcakes

Hope I'm not making you crazy with all these pink themed recipes. I've come across a lot of delicious recipes in the past few weeks, all in pink. Only difficulty was choosing my favorites as I wanted to try all of them. I love all things Pink! And if you are like me, you would love these cupcakes. Try these delicious & cute cupcakes with crushed pistachio nuts and a hint of fragrant rosewater to create a very special treat for your loved ones :)

Rose & Pistachio Cupcakes

Serves: 12

Ingredients :

For the cupcakes :
  • 120 gm.  butter, softened
  • 160 gm.  caster sugar

  • 1 tsp.  rosewater
  • 2 large eggs, at room temperature
  • 200 gm.  self-raising flour
  • 1 tsp.  baking powder

  • 2 tbsp.  milk

  • 50 gm.  pistachios, chopped
For the butter-cream :
  • 120 gm.  butter, softened
  • 200 gm.  icing sugar, sifted
  • 1 tsp.  rosewater
  • 2 tbsp.  milk , as required
  • Chopped pistachios, for garnish


Method :

For the cupcakes : 
  • Preheat the oven to 180˚C. Line a 12-hole muffin tin with paper cases.
  • Sift the flour and baking powder together in a bowl and set aside. 
  • In a separate large bowl, beat the butter and sugar until light and fluffy. 
  • Add the eggs one at a time, beating well after each addition. Stir in the rosewater. 
  • Fold in half the sifted flour, then the milk, then the rest of the flour, gently folding well to combine after each addition.
  • Gently fold in the pistachios.
  • Spoon the cupcake mixture into the cupcake cases and bake for 18-20 minutes or until a cocktail stick inserted into the center comes out clean. 
  • Remove the cupcakes from the oven and place on wire racks to cool completely.
For the butter-cream : 
  • In a large bowl, beat the butter until creamy.
  • Gradually add the sugar and beat until smooth and creamy.
  • Add the rosewater and milk ( as required ).
  • Fill a piping bag with butter-cream and pipe onto the cupcakes.
  • Garnish with chopped pistachios.

  31. These do look stunning! Also, I love the blend of pistachios and rose flavors. I have never made any baked goods with rosewater, but it is definitely on my "to do" list. This does look like a winner of a recipe!
