Eid Mubarak : Strawberry Jam Diagonal Cookies


Strawberry Jam Diagonal Cookies ... Buttery, crumbly and melt-in-your-mouth cookies filled with homemade jam.

Strawberry Jam Diagonal Cookies

Ingredients :
  • 1/2 cup unsalted butter, softened
  • 1/4 cup castor sugar
  • Pinch of salt
  • 1 tsp.  vanilla essence
  • 1 1/4 cup all purpose ( plain ) flour
  • 3 tbsp.  Strawberry jam ( or any jam or preserves of your choice )
  • Sliced almonds, optional
  • 8 to 10 tbsp.  icing sugar ( or enough to make a thick but runny icing )
  • 1 tbsp.  lemon juice or water

Method :
  • Preheat oven to 180 C / 350 F. Line a cookie sheet with baking paper.
  • In a large mixing bowl, beat butter with sugar until light and fluffy.
  • Beat in salt and vanilla essence.
  • On low speed, gradually add flour; beating until just incorporated.
  • Gather the dough into a ball and divide equally into 3 portions.
  • On a lightly floured surface, roll each portion of dough into a ( 8 to 9 inches ) long cord / rope ( it may crack while rolling, just squeeze it together and work it so it extends ).
  • Carefully place the cords / ropes on cookie sheet ( about 3 inches apart ).
  • Press your finger into cords / ropes ( about 1/4 inch ) from the top edge to make a border.
  • Press all the way down the length of cords / ropes until you reach ( about 1/4 inch ) again ( it should look like a little canoe ).
  • In a small bowl, place jam or preserves and mix it well to break up any lumps.
  • Spoon jam or preserves into each indentation. Sprinkle sliced almonds on top, if you like.
  • Bake in the oven for 15 - 20 minutes or until edges begin to brown.
  • Remove from oven and let cool completely on cookie sheet.
  • Once cooled, make icing by mixing the lemon juice or water together with the sugar to make a thick but runny icing.
  • Drizzle the icing equally over each of the canoes with a spoon and let it harden.
  • Once the icing is set, cut the canoes diagonally into ( about 1 inch ) wide slices.
  • Or omit the icing, simply dust with icing sugar.
Notes : 
  • I didn't use icing, though as the cookies were sweet enough without them.
  • It is easier to cut the cookies when they are slightly warm.

  13. I LOVE shortbread cookies with jelly! Probably one of my favorite cookies since I was a little girl (well, that and anything with a crazy amount of sprinkles! ;) I've never made them before - you make them look so easy! I'm going to try it!
