Rich Almond Upside-Down ( Khoya ) Cake ... Soft and buttery cake, loaded with almond flavor. Khoya not only adds flavor but gives the cake a very rich texture as well.

Rich Almond Upside-Down ( Khoya ) Cake

Ingredients :
For Base :
- 1 tbsp. butter, softened
- 25 gm. coarsely ground almonds
- 15 whole almonds, sliced from center
For Cake :
- 75 gm. plain flour
- 1 tsp. baking powder
- 25 gm. ground almonds
- 100 gm. butter, softened
- 100 gm. castor sugar
- 2 eggs
- 1 tsp. vanilla essence or 1/4 tsp. almond essence
- 1/2 cup Khoya
- 1 - 2 tbsp. milk, if required
Method :
For Base :
- Preheat the oven to 180 C. Grease and line an 8" round cake pan with greaseproof paper. Coat pan with butter.
- Sprinkle ground almonds over the base to coat the bottom. Arrange the whole slit almonds on the base in circular pattern. Keep aside.
- Sieve together flour and baking powder. Add ground almonds; keep aside.
- Beat butter and sugar in a large bowl till light and fluffy.
- Add in eggs, one at a time, beating well after each addition.
- Add essence and khoya. Beat well again.
- Gently fold in flour mixture until well mixed.
- Carefully spoon the batter into the prepared pan.
- Bake for 30 minutes until a cake tester comes out clean when inserted into the center of the cake.
- Remove and allow to cool for a 5 minutes in the pan.
- Run a knife around the edge of the pan and then invert the cake on the serving plate.
- Khoya is a dairy product which is prepared by boiling and reducing the milk to a semi-solid stage.

Mariam, it is totally different. This almond cake is quite buttery. Basbousa is made of semolina and is soaked with syrup. Thank you for your sweet words :)

ReplyDeleteMagali, You can find it in the freezer section of Pakistani or Indian stores. I'm not sure whether dried milk will work for this cake. Khoya or Mawa has a creamy buttery texture. To make your own, check this out:
