Pepper Cumin Cookies ... A unique combination of flavors, salty & spicy with a hint of sweetness.
Pepper Cumin Cookies

Makes : 30 cookies
Ingredients :
- 2 cups all-purpose flour
- 6 tbsp. sugar
- 1 tsp. salt
- 2 tsp. grated lemon zest
- 1 tsp. black peppercorns, cracked
- 1 tsp. cumin seeds, cracked
- 1 cup unsalted butter, softened slightly and cut into pieces
- 1 tsp. vanilla extract
- Preheat the oven to 180 C. Line a baking sheet with parchment / baking paper.
- Put the flour, sugar, salt, lemon zest, cracked peppercorns and cumin seeds in a food processor and pulse to combine.
- Add the butter and vanilla and pulse until mixture just forms a dough.
- Place the dough on a work surface and shape into 1-inch balls.
- Place them 2 inches apart on the baking sheet and flatten each cookie with the palm of your hand.
- Bake at 180 C for about 12 - 14 minutes or until lightly browned.
- Remove from the baking sheet and place them on a rack to cool.
- Watch carefully as these cookies brown quickly. Remove them from the oven as soon the edges just start to turn golden.
