Carrot Halwa ( Gajar Ka Halwa )

Carrot Halwa or Gajar ka Halwa is one of the most popular dessert during winter in Pakistan. It is made with grated carrots, sugar, khoya and nuts.

Ingredients :
  • 2 kg.  carrots
  • 250 to 300 gm.  sugar
  • 1/2 cup Ghee ( clarified butter ) or cooking oil
  • 250 gm. Khoya 
  • 4-5 green cardamoms ( crush the seeds )
  • 8 - 10 almonds and pistachio, sliced

Method:
  • Wash, peel and coarsely grate the carrots. 
  • In a pan, add carrots and sugar. Cook, covered, on medium heat until the carrots are tender and the water dries up.  
  • Now add ghee and cook, stirring continuously on high heat till the mixture leaves the sides of the pan.
  • Turn off the heat, add khoya and ground cardamom.
  • Cover and leave it for 15 minutes, before mixing it well.
  • Transfer the mixture to a serving plate. Garnish with nuts, extra khoya and boiled egg slices; if desired.
  • Serve hot.
Note:
  • Khoya is basically dried milk used in many sweet dishes. You can replace it with dry milk powder. Take dry milk powder in a bowl. Add just enough milk to form a stiff dough. Crumble with your hands. Or wrap and freeze it for an hour, then grate it.

  8. Love gajar ka mitha!!!! Don't make it often b/c I find it so time consuming. Instead of koya I add powdered milk.
